Now that Singapore’s burger scene has taken off, the debate on where to head to for the best burgers has only gotten more heated. Some fast food places are shaking things up by introducing all sorts of new flavours in their efforts to ramp things up, but more often than not, the hype and novelty wears off pretty fast. And when expectations are raised that high, there’s the risk of you walking away feeling unsatisfied.
After one too many lacklustre burgers, we’ve decided to step it up by sussing out the craziest-sounding burgers to be found on our island. We’ve split this list into 4 categories, namely unusual burger fillings, unusual burger buns, burgers with a sneaky surprise and dessert burgers. Here’s a line up of never-heard-of-before burger creations, ranging from foie gras stuffed burgers to sweet dessert sliders.
Lobster rolls are pretty standard stuff, but lobster BURGERS not so much. Spathe Public House’s Signature Black Bun Lobster Burger ($35++) is the burger shake-up of your typical seafood roll. This black beauty comes layered with braised tomatoes, buttery avocado chunks, a golden slab of hash-brown and, of course, a succulent whole lobster tail, all tucked between two squid ink buns. Although it’s slightly pricey, the lobster burger costs around the same price, if not lower, than most lobster rolls you can order in Singapore. So the next time you find yourself craving some lobster, skip the boring old rolls and indulge in this crazy combo instead!

The Beast Burger ($125++) is so insane and so massive, you need to pre-order it. This 9-inch wide monster burger is served up as the star of The Beast Burger Challenge at The Beast, a Southern-themed restaurant-bar. If you wish to take on this gastronomic challenge, be warned. You’ll be contending with a colossal 7-pound burger made up of 1.6 pounds of beef patty, 1 pound of slow-cooked pulled pork, 1 pound of crispy buttermilk fried chicken and layers of slaw and veggies. You’ll also have to polish off a bucket of fries on the side. The restaurant recommends this beastly burger for a group of 4 to 5 friends, or one very hungry, very crazy human being.

As someone with an unabashed love for crab, I’ve been dying to get my hands on Artistry’s Chilli Crab Burger ($25). You won’t be disappointed by skinny, carb-heavy crab cakes here. The crab cake in this Singaporean-inspired creation is the biggest I’ve ever come across. It’s packed full of sweet, sweet crab meat and luxurious crab roe, with the thinnest coating of batter. The addictive egg-laced chilli sauce is served in a bowl on the side for dipping, so you’ll have free reign over how much sauce you want with your burger. Say goodbye to the woes of messy, soggy burgers!

The Roots ($17++) at Three Buns by Potato Head Folk is a 100 percent meatless burger stack that will put many beef patties to shame. Crunchy on the outside and creamy on the inside, the golden cheese fritters in the burger steal the show alongside generous wedges of sweet roasted seasonal vegetables. Crisp coleslaw, pickles and lettuce provide a refreshing crunch to this decadent medley. Just for good measure, the whole lot is doused in a blanket of their signature Hot Poppa hot sauce and rich mayonnaise, for a killer spicy-sweet combination.

Here’s one for the health-conscious. If you’re mad about tofu and mushrooms, The Living Cafe’s Sesame Tofu ($14++) is a total dream. Grilled eggplant, raw dijon mustard and a medley of mushrooms are layered on a bed of crisp greens. The whole lot is served sandwiched between two sesame-crusted tofu “buns”, with a side of baked sweet potato fries. Even as a tofu-lover, I had my doubts about this burger as I thought it looked too healthy to taste good. However, I ended up really enjoying this vegetarian burger. The crispy tofu slabs were perfectly seasoned with an added crunch from sesame seeds, while the eggplant and mushrooms provided that umami flavour every burger should have. This healthy switch-up from your usual grease-laden burgers is worth trying, if you’ve got an open mind.

Burgers might not be the first dish that comes to mind when you hear the word “atas”. However, db Bistro’s Original db Burger ($42++) is a game-changer that falls nothing short of luxurious. There’s a reason why the medium-rare sirloin patty appears so huge – it isn’t just a regular beef patty. A cross-section cut of this towering burger reveals an interior stuffed not only with red wine-braised short ribs, but a block of buttery foie-gras as well. A touch of black truffle seasoning and two fluffy Parmesan buns complete the decadent and very filling combination. Talk about living life in the lap of luxury.

One of the most recent food trends seem to be desserts masquerading as mains. The modern tapas joint FOC has jumped on that bandwagon with their deceptive FOC Hamburguesa de chocolate ($12++), or FOC Chocolate Hamburger. The adorable dessert creation has a chocolate ganache “patty”, mango “cheese”, sliced strawberry “tomatoes” and mint leaf “lettuce”, all sandwiched between two creamy white chocolate-coated vanilla mousse “buns”. With a medley of textures and a creative assembly, this is the ultimate burger dessert in disguise.
