The Padangton started out as a one-off pop-up at CelebFest Ramadan 2023, AKA one of the main Ramadan bazaars in Singapore. But thanks to the overwhelming support of its patrons, the kiosk has now become a brick-and-mortar eatery situated right across The Ramen Stall in Bugis.Â
As the name suggests, The Padangton offers food that has influences from Padang, a city in Indonesia, but with a delightful twist.Â
Starting off strong, their signature Lamb Shank Rendang Padangton ($27++) is a fun take on the classic beef Wellington dish. The crispy and flaky pastry is stuffed with a fall-off-the-bone lamb shank rendang. You get an authentic taste of Padang-style rendang here as the recipe is inherited from the owner’s mother, who comes from Padang.
In terms of texture, the rendang is thick and rich, which makes a good pairing with the pastry. While we’re familiar with rendang as a dish that tastes similar to curry, the rendang here exudes a stronger coconut flavour with a kick of spice.Â
If you’re not a fan of gamey flavours, fret not—the lamb doesn’t exude a strong smell, and the meat pairs well with the buttery pastry.Â
Their Pulut Sushi Rendang Padangton ($12.50++) is another take on Padang fusion food. Pulut, which refers to yellow glutinous rice, is only served during special occasions, but this celebratory dish can be found daily at The Padangton.Â
This unique rendition is generously stuffed with beef rendang, and topped with sweet and mildly spicy serunding AKA fried grated coconut. Dip the rice into the sambal ijo, which acts as a replacement for wasabi, for an extra kick of flavour and spice.Â
For sides, Padang Drumlets Sambal Ijo ($8.50++) makes for a great sharing option as you get a total of six drumlets. Baked with sambal ijo, an Indonesian green chilli paste, these drumlets are tangy and moderately spicy. A flavourful twist to the regular baked chicken drumlets in a nutshell.
