This New Hidden Restaurant Serves “Whole Animal” Dishes—Pig Head Nuggets, Roast Duck Head And More

Dirty Supper has whole animal dishes in Tiong Bahru

The picture above shows a space within Tiong Bahru’s Moh Guan Terrace, where speakeasy yakitori restaurant Bincho by Hua Bee once stood. Earlier in the day, it is occupied by a bak chor mee stall. When the clock strikes 3pm, however, that space transforms into Dirty Supper, a new restaurant with a menu that seeks to use the whole animal—that means you’ll find dishes that use animal parts such as a pig head, duck head, chicken skin and more.

Chef-owner Pete Smit, who formerly ran Underdog Inn, brings that restaurant’s whole animal philosophy into this new, more casual venture of his. While his menu features all-day dishes as well as dinner fare, the daily specials that use animal parts sourced from local markets contribute significantly to the appeal of the restaurant. We hear that Dirty Supper has served everything from roast duck head to duck heart sausage—but keep in mind that these are subject to availability.

One all-day item you must try is the Pig Head Nuggets with White Anchovy ($16++). As its name suggests, these crispy-on-the-outside, soft-on-the-inside nuggets feature the meat from a pig’s head that is said to have a particularly bold flavour. The anchovy sauce drizzled on top of them should give the nuggets a burst of umami as well.

Another unique dish to try is the Raw Prawns with Black Lime and Pickled Chilli ($24++). These fresh, sweet prawns are infused with the tart and piquant flavours of the aforementioned ingredients, resulting in a light dish that’s both refreshing and delectable.

For a heartier dish, get the Aged Duck Breast with Beer Pickled Fig ($38++), which is said to feature tender duck breast complemented by the sweet tanginess of the beer-pickled figs.
