Elijah Pies opens third and largest cafe in Joo Chiat

Ask me where to get the best pies in Singapore, and I’d say Elijah Pies without hesitation. I used to make the trek from the East all the way to the CBD just for their sweet and savoury pies, but that’s about to change: the specialty pie brand is opening a 60-seat flagship at 72 Joo Chiat Place on 12 September, marking its third and largest outlet to date.

Housed within a 96-year-old heritage shophouse, Elijah Pies’ new flagship pays homage to the building’s Peranakan roots. The space is the result of a six-month collaboration with Nice Projects, a London-Sydney design studio behind the interiors of three-Michelin-starred Odette and New Bahru.

Must-tries on the new menu are the brand’s Pizza Pies. The six-inch pies, designed for sharing, come in four flavours: Garlic Ebi ($22++), Truffle Croque ($24++), Cheeseburger ($23++), and the sour cream and onion potato chip-inspired Ruffles ($23++).

Each pastry is made through a three-day process, with laminated dough hand-folded into 27 alternating layers of French butter and flour, then shaped into a pizza-form croissant crust.

There’s also the new Kaya Toffee Pie ($9++), featuring housemade pandan coconut jam layered over a hidden seam of golden gula melaka toffee, inspired by co-founder Elijah Tan’s late grandmother’s cooking.

An outlet exclusive to look out for is the Souffle Pie ($18++). Made fresh to order, this chocolate souffle stars a warm gianduja centre over almond joconde and hazelnut praline, finished with a chocolate flower inspired by Peranakan tilework.

To drink, Elijah Pies offers four craft mocktails from $12++. There’s the 1930, layering cold-infused pandan coconut water with butterfly pea and clarified hazelnut milk, and the Berry Bubble, a take on strawberry matcha with clarified strawberry espuma and a baked strawberry leather roll-up.

For something more refreshing, consider the Rolly Lolly, made with clarified mango juice, grapefruit oleo saccharum and a housemade orange blossom lollipop, or the White Soiree, a celebratory sparkling tea in a champagne hue.
