Jiak Song Mee Hoon Kway Bugis

Jiak Song Mee Hoon Kwayā€˜s arrival in Singapore’s hawker scene was met with tons of fanfare. The mee hoon kway stall is run by an ex-Masterchef Asia finalist, Aaron Wong, and specialises in noodles that are handmade to order. They first opened in Telok Blangah, have recently expanded to Bedok, and now, the brand is set to dock in Bugis.

Located in the coffeeshop along Queen Street, behind Bugis+, Jiak Song Mee Hoon Kway Bugis shares space with another famous hawker, King of Pao Fan. If you don’t live near Telok Blangah nor Bedok, this latest central opening gives you easy access to Wong’s delicious noodle dishes.

Must-tries include the Signature Dry Mee Hoon Kway ($3.50), where QQ noodles are dressed in a tasty dark sauce, and topped with minced pork, spinach, onsen egg, and fried ikan billis. Enjoying this with their house-made chilli is a must, as it adds plenty of spice and oomph to each bite, thanks to the addition of fermented beans in the chilli.

If you prefer soupy mee hoon kway, get the Signature All-In Combo Soup Mee Hoon Kway ($5).Ā This loaded ball contains pork slices, as well as handmade pork and shrimp balls atop the usual accoutrements.

Expect to wait in line a little, as the sheets of mee hoon kway are rolled and sliced to order. This ensures that the mee hoon kway you get remains translucent and chewy, rather than clumpy and tough. There is also ban mian if you prefer thin noodles.
