If you have visitedĀ Holland Drive Food Centre in the last month or so, you might have spotted a new entrant to the lineup of stalls there. Next to Ru Ji Kitchen, which we featured in our bak chor mee showdown, isĀ Lau Mian, whose signage is dominated by a single illustration of the one item they sell: ęé¢ (lÄo miĆ n).

The illustration, if not the name, tells you what Lau Mian offers on the menuāęé¢ (lÄo miĆ n), which translates to tossed noodles. There are only two items on the menu, with the only difference being the ingredients that come with the same base of XO sauce dry-tossed noodles.

What makes the noodle offering at Lau Mian stand out is their house-made XO sauce, chock full of dried scallops and shrimp. A generous sauceplate-full is added to a combination of oyster sauce and shallot oil, then thoroughly tossed with la mian. Specially sourced from a supplier, these noodles have been praised for their springy, QQ finish.
If you should require more spice, thereās also a fiery, house-made fresh red chilli paste that you can add on to your bowl.

Option one on the menu: XO Lau Mian (Dry) with Braised Pork & Egg ($5.50) pairs the noods with sous vide, Taiwanese-style braised pork shoulder, as well as half an Ajitama egg.

Alternatively, thereāsĀ XO Lau Mian (Dry) with Seafood ($6.50), which swaps out the pork and egg for a smattering of mussels, clams and small scallops.
Dine in at the hawker centre, and youāll be served a side of homey carrot and radish soup to go along with your order of noodles!
If youāre still unconvinced to give Lau Mian a shot, the stall is a one-man operation headed by an ex-fine dining chef who, according to this 8days.sg article, has already cut his teeth at several now-defunct restaurantsāand heās only 35. The menu is slated to expand down the line, so keep your eyes on the stall!
