Little India is an unlikely location for a one-MICHELIN-Starred Chinese restaurant to reside, but Chef Kang’s is just that, serving up spectacular Cantonese dishes behind an unassuming facade. There are no bells and whistles here – just immaculate, comforting food in a matching homely environment. Crispy Golden Prawn Rolls with Salted Egg Yolk ($38++ for small, $68++ for medium, $98++ for large) elevates the humble youtiao by stuffing it with juicy prawns and cucumber shards, each piece cradled by custardy salted egg yolk.
Braised Luffah with Egg White ($30++ for small, $60++ for medium, $90++ for large) floored us with its depth of seafood flavour from dried scallops, crab meat and briny ikura; the latter imparting Japanese flair. Har cheong gai enthusiasts will find familiar flavours in the Signature Deep-fried Prawn Paste Pork Belly ($28++ for small, $48++ for medium, $68++ for large), which infuses that umami punch into crispy slivers of pork belly.

Nestled among the clubs and drinking holes of Clarke Quay, Peony Jade dishes out MICHELIN Plate-worthy Cantonese food in a refurbished warehouse. Our Deep-fried Prawns Coated with Salted Egg Yolk ($38++ for small, $68++ for large) took the salted egg craze to the next level with succulent shrimp and a luscious glaze of salted egg yolk, while the Double-boiled Buddha-Jumps-Over-The-Wall Soup ($108++, advanced order required) is packed with premium ingredients such as abalone and sea cucumber.

Established in 1988, Wah Lok has received a steady stream of awards since its inception, including the MICHELIN Plate. This Cantonese stalwart owes its continued success to keeping things fresh, switching up menu items every year. They’re renowned for their dim sum selection, headlined by the Baked Barbecued Pork Bun ($6++ for three pieces), which strikes the right balance between sweet and savoury. That’s accompanied by more nouveau counterparts, like the Deep-fried Banana Roll with Prawn & Cheese ($7.50++ for three pieces) and Steamed Vegetarian Dumpling with Bamboo Fungus in Truffle Oil ($7.20++ for three pieces).

Coming from a Peranakan family, the dishes Straits Chinese serves are close to my heart. Using recipes that have been passed down for generations, these are authentic Peranakan dishes my grandmother would be proud of.
