I’m a sucker for seafood soup, and the Double-boiled Assorted Seafood Soup Served in Golden Pumpkin ($28++) was one of the best I’ve ever had. The depth of seafood flavour was impressive, with dried and fresh scallops, bouncy prawns and succulent crab meat.

If you’ve got an adventurous palate, check out their Wok-fried Crocodile Meat and Asparagus with Spicy Sauce ($42++), which tastes like a cross between fish and pork sautéed in XO sauce. The Smoked Chicken with Jasmine Tea Leaves ($30++ for half) is well balanced, with wisps of fragrant smoke perfuming the supple meat.

2. Hua Ting Restaurant (Orchard Hotel Singapore)


Newly refurbished with sleek decor and vast private rooms, MICHELIN Plate awardee Hua Ting Restaurant, which is known for its exceptionally sophisticated Cantonese cuisine, is a wonderful place for celebrating special occasions. Roast duck is a fixture at Chinese restaurants, but the Hua Ting Signature Crispy Roasted Duck ($45++ for half, $82++ for whole) is a cut above most. It was mind-bogglingly succulent, each piece leaking with duck juices and endowed with shatteringly crisp skin.

Crustacean fans should go for the Stuffed Golden Crab Shell, Fresh Crab Meat, Wild Mushroom ($22++ per person), while the Poached Rice, Star Garoupa, Crispy Rice, Superior Stock ($28++) is wholesome and comforting.

3. Yan Ting (The St. Regis Singapore)


The St. Regis stalwart and MICHELIN Plate awardee Yan Ting doles out familiar Cantonese flavours, elevated with unexpected combinations of ingredients. We went gaga over the Specially Braised US Supreme Beef with Watermelon and Golden Almond ($68++). Fork-tender cubes of beef are coated with a rich and intensely savoury sauce that has a kiss of sweetness from watermelon rind.

Fans of Singapore’s national beer will enjoy the Steamed Alaskan Crab Meat with Tiger Beer, Dough Sticks and Egg ($34++) that puts a fresh twist on traditional Chinese steamed egg, while the Braised Gold Fish Fillet with Korean Ginseng and Pumpkin Soup ($38++) delivers with exceptionally flaky fish and gentle herbal notes.

Devour these and more innovative dishes like Pik Fong Tong Style Fried Pork Ribs with Onion and Tea Crisps ($28++) at 15% off – as long as you’ve got a Maybank Credit or Debit Card in your wallet. 4. Chef Kang’s


Little India is an unlikely location for a one-MICHELIN-Starred Chinese restaurant to reside, but Chef Kang’s is just that, serving up spectacular Cantonese dishes behind an unassuming facade. There are no bells and whistles here – just immaculate, comforting food in a matching homely environment. Crispy Golden Prawn Rolls with Salted Egg Yolk ($38++ for small, $68++ for medium, $98++ for large) elevates the humble youtiao by stuffing it with juicy prawns and cucumber shards, each piece cradled by custardy salted egg yolk.

Braised Luffah with Egg White ($30++ for small, $60++ for medium, $90++ for large) floored us with its depth of seafood flavour from dried scallops, crab meat and briny ikura; the latter imparting Japanese flair. Har cheong gai enthusiasts will find familiar flavours in the Signature Deep-fried Prawn Paste Pork Belly ($28++ for small, $48++ for medium, $68++ for large), which infuses that umami punch into crispy slivers of pork belly.

5. Peony Jade (Clarke Quay)


Nestled among the clubs and drinking holes of Clarke Quay, Peony Jade dishes out MICHELIN Plate-worthy Cantonese food in a refurbished warehouse. Step away from the surrounding bustle by tucking into pretty plates like the Deep-fried Crispy Kampung Chicken with Prawn Mousse & Sliced Fresh Mango ($28++ for half, $48++ for whole). The dish had a marvellous interplay of textures and flavours, with crispy and salty chicken skin, bits of bouncy prawn, and sweet mango.

Our Deep-fried Prawns Coated with Salted Egg Yolk ($38++ for small, $68++ for large) took the salted egg craze to the next level with succulent shrimp and a luscious glaze of salted egg yolk, while the Double-boiled Buddha-Jumps-Over-The-Wall Soup ($108++, advanced order required) is packed with premium ingredients such as abalone and sea cucumber.

6. Wah Lok Cantonese Restaurant (Carlton Hotel Singapore)


Established in 1988, Wah Lok has received a steady stream of awards since its inception, including the MICHELIN Plate. This Cantonese stalwart owes its continued success to keeping things fresh, switching up menu items every year. They’re renowned for their dim sum selection, headlined by the Baked Barbecued Pork Bun ($6++ for three pieces), which strikes the right balance between sweet and savoury. That’s accompanied by more nouveau counterparts, like the Deep-fried Banana Roll with Prawn & Cheese ($7.50++ for three pieces) and Steamed Vegetarian Dumpling with Bamboo Fungus in Truffle Oil ($7.20++ for three pieces).

Incredibly fresh seafood is another highlight here. Stunningly juicy Alaskan Crab ($20++ per 100g) is served in a variety of ways. Our favourite features its pearly flesh nestled among creamy scrambled egg white, while the Vermicelli Soup with Lobster in Chinese Wine ($28++) boasted tender and sweet crustacean goodness.

7. Straits Chinese


Coming from a Peranakan family, the dishes Straits Chinese serves are close to my heart. Using recipes that have been passed down for generations, these are authentic Peranakan dishes my grandmother would be proud of.

Stewed pork is ubiquitous worldwide, and Babi Pongteh ($12++ for small, $18++ for medium, $22++ for large) is the Peranakan rendition. Tender hunks of fatty pork belly is bathed in a viscous sauce that’s given life by cinnamon and clove. Fish curry fans will likely gravitate to the seafood duo of Udang Asam Goreng ($12++ for small, $20++ for medium, $30++ for large) and Sotong Asam Goreng ($12++ for small, $18++ for medium, $22++ for large), both blessed with addictive assam tang.

Ayam Buah Keluak ($14++ for small, $20++ for medium, $30++ for large) often scares those new to Peranakan food with its appearance. But its unique earthy funk is unmistakable and pairs brilliantly with succulent chicken flesh.

Stepping into Jade is breathtaking. High ceilings, exquisite ornaments, beautiful plating and an abundance of natural light make this swanky MICHELIN Plate awardee a terrific choice for when you really want to impress. That opulent impression continues with dishes such as Simmered Egg Noodles with Live Boston Lobster and Housemade X.O Chilli Sauce ($39++), which features a massive, ludicrously fresh lobster and springy egg noodles complemented by umami hae bee flavour.

Meat fanatics should head straight for the Sautéed Diced Kagoshima Wagyu Beef with Crispy Garlic in Cambodian Black Pepper Sauce ($36++ per person, $88++ per portion), which bursts with meaty juices and punchy black pepper flavour. Subtle, nose-clearing heat comes in the Crispy Sea Prawns with Housemade Sesame Mayonnaise  ($12++ per piece), which flashes an attractive blend of richness, freshness and seafood flavour.
