China-Famous Souffle Pancake Chain Opens In Somerset With Matcha And Hokkaido Milk Flavours

Moe Moe Soft Souffle has fluffy souffle pancakes in Somerset

Souffle pancakes: soft, fluffy Japanese pancakes made with whipped egg whites and creamy meringue to achieve a pillowy soft texture. This delicious treat made waves in Singapore in 2019, with brands such as Fluff Stack and Belle-Ville Pancakes constantly teeming with foodies. Adding to the list of souffle pancake spots is Moe Moe Soft Souffle, a China-famous chain that’s been drawing crowds since its opening in early May 2025. FYI: the brand has over 30 outlets in China! 

We started with their signature Hokkaido Milk ($5.90) souffle, featuring an original pancake base loaded with house-made Hokkaido milk whipped cream. We found the cream a tad cloying, but if you’re a huge fan of Hokkaido milk-flavoured desserts, we recommend trying to see if it’s to your liking.

FYI, all pancakes are baked in-house daily and restocked once every few hours, depending on the demand. Every pancake flavour uses the same batter, and while its texture isn’t as light as other souffle pancake joints we’ve tried, it’s still softer and fluffier than a regular pancake. 

The Sakura Hokkaido Milk ($6.90) features strawberry whipped cream sandwiched between the same original pancake base. You also get a pretty pink sakura-shaped flower icing right smack in the middle for an IG-worthy finishing touch.

Matcha cafe girlies, go straight for the Matcha ($5.90) pancake. As fellow enthusiasts, we were happy to see a matcha souffle here, though it lacked the grassy, earthy flavours we were hoping for.

For those who prefer something fruity, go for the Strawberry & Cream ($6.90). It comes with three thinly sliced strawberries paired with the same rich cream used in the Hokkaido Milk pancake. 

There’s also the Grape & Cream ($6.90) that swaps out the strawberry for muscat grape slices. This was an equally refreshing treat, and we recommend both flavours if you like sweet-tangy desserts.

For a hot day out, go for the refreshing Hokkaido Milk Ice Cream ($5.50) or Matcha Ice Cream ($5.90), which you can get in a cone or cup.

If you’re trying more than one flavour, there’s a cute perk to sweeten the deal: for every five souffle pancakes purchased, you’ll receive an exclusive souffle keychain!

The kiosk has been drawing long queues since its opening, so we recommend coming earlier in the day to beat the crowd.

Moe Moe Soft Souffle is located at 111 Somerset, which is directly connected to Somerset MRT Station. There are no dine-in seats, but with 313 Somerset just across the street, you can snack on them while window shopping.
