If you’ve followed One Prawn & Co‘s journey since they started, you’ll know that they’ve just opened a swanky restaurant in New Bahru. The brand has come a long way since its humble beginnings, starting as a hawker stall at Golden Mile Food Centre, before moving to MacPherson. FYI: Their MacPherson eatery has since rebranded to Zhup Zhup.
Fans will be happy to know that Chef Gwyneth Ang, who has cut her teeth at the renowned Burnt Ends and Forlino, continues to run the show at this new restaurant.
Visit from 11am to 3pm daily to try their lunch exclusives: Jumbo Tiger Prawn Ramen ($35++), Smoked Beef Brisket Ramen ($35++), and Crispy Pork Belly Ramen ($26++).
We started with their Jumbo Tiger Prawn Ramen, priced at a whopping $35++ a bowl. BTW, back at their old MacPherson stall, the most expensive item on their menu was the Five Fortunes Jumbo Prawns Claypot, which was sold at $30.
Crowning this massive bowl of ramen was an XL tiger prawn, butterflied into two halves. The jumbo prawn stole the show for me; its flesh came off the shell without much tugging and tasted super fresh with a natural sweetness.
I was equally impressed with the full-bodied broth, featuring the same signature recipe at Zhup Zhup. We’re told that 18kg of prawn heads and 30kg of pork bones are boiled for over 20 hours to achieve this uber-thick and flavoursome broth that’s loaded with umami. It’s this same soup that earned Zhup Zhup its Michelin Bib Gourmand for three consecutive years, 2024 included.
While the ramen noodles were decently springy with a neutral flavour, they turned soggy quickly, soaking up a fair bit of the broth and leaving me with an almost gravy-like soup. Hence, I’d advise you to tuck in stat to enjoy these carbs at their best al dente state.
Next in line was the Smoked Beef Brisket Ramen, touted to be the “first of its kind” in Singapore.
You get the same fixings here: rich prawn tonkotsu broth, ramen noodles, half a hanjuku egg, bamboo shoots and a nori sheet.
The star of the show was the chunk of meat, prepared with 200-day grain-fed Australian Angus beef that’s painstakingly smoked and roasted over applewood for 16 hours.
That’s not all. During the cooking process, the beef was also basted with lager for extra umami. The result? A generous slab of smoky and aromatic brisket that fell apart without much effort.
The last iteration in the ramen trio is the Crispy Pork Belly Ramen, topped with a sizeable piece of pork belly that’s brined for 12 hours, then sous vide for another 12, before it’s roasted.
Thanks to this painstakingly long preparation process, the meat was juicy and succulent, topped with a melt-in-the-mouth fat cap. I just wished the crust was crispier—perhaps serving the pork belly on a separate plate would be a better option.
Besides ramen for lunch, you can look forward to a series of small bites and snacks, designed to pair well with the restaurant’s curated cocktail menu.
We enjoyed Prawn Toast and Aioli ($16++), a twist on the classic Hong Kong dim sum. Long-fermented sourdough was topped with umami-laden prawn paste and kombu oil, then served with a side of house-made aioli for dipping into.
While the toast made for a delicious starter, I found it rather pricey for two small pieces.
Otherwise, you can carb up with their Sourdough Bread ($10++), sourced from an external bakery, best paired with a tangy and creamy Assam Hummus ($8++).
One Prawn & Co is located on the ground floor of New Bahru, a 14-minute walk from Fort Canning MRT Station. Though not the most accessible by public transport, there are plenty of parking lots within the premises, so drivers can visit with ease.
You’ll find both indoor and outdoor seating, the latter of which can be considered on a breezy evening. Otherwise, head to the bar counter seats to watch the chefs in action!
One Prawn & Co has already established itself for its extra-gao broth. Now, the brand will be known for its well-executed meats. Yes, prices are steep, but when you take the countless hours and tedious prep work into consideration, I’d say they’re worth a shot.
I can’t wait to return for their dinner menu, which offers a whole new lineup of innovative Modern Asian creations by Chef Gwyneth!
