This New Ramen Eatery Serves Rare Ginger Shoyu and Garlic Pork Fat Ramen

Ramen Soshiji has rare Ginger Shoyu Ramen at Orchard Plaza

If you’re tired of the usual ramen options, such as tonkotsu or miso, check out Ramen Soshiji. This cosy new spot at Orchard Plaza serves up unique regional varieties, including Iekei-style ginger ramen and hearty Jiro-style ramen! This small, 12-seater ramen joint opened in late August 2025 and has been drawing long queues since. 

I was a full-on ramen nerd 10 years ago, and while I don’t slurp on ramen as often these days, my love for discovering great ramen spots in Singapore hasn’t faded. So it’s no surprise that Ramen Soshiji caught my attention with its rarely-seen takes on the iconic Japanese noodle dish.

This is clearly exemplified in their Ginger Shoyu Ramen (from $13.80+), a lesser-seen style of ramen originating from Nagaoka, Niigata Prefecture. It is said to blend the savoury umami shoyu with the refreshing zing of ginger, forming a deep and rich broth.

The ramen comes with simple toppings of chashu, spinach, seaweed, and naruto (fishcake), and you can add more chashu and an ajitama egg in the special topping bowl. This dish is easily the most popular here and is perfect for those who wish to try a more unique bowl of ramen.

Fans of cult-favourite Jiro Ramen from Tokyo can find similar comically large bowls here, with the Jiro Style Ramen (from $15.80+) available in increasing sizes; though the largest size, Mashi Mashi x3 ($19.60+), is definitely not for the faint of heart.

Jiro-style ramen made waves years ago in Japan for being what Japanese ramen is typically not—a mountainous heap of cabbage, bean sprouts, and thick chashu slices sit atop a large bowl of thick and fat noodles, filled up with a fatty, emulsified pork bone broth enhanced with a hefty dose of garlic.

The Iekei-Style Ramen (from $15.80+) is yet another unique offering, melding Hakata-style tonkotsu broth with Tokyo-style chicken shoyu stock. It uses thick noodles usually found in miso ramen, making an effective vessel to slurp up the rich, flavour-laden broth.

Of course, you can also find Hakata Tonkotsu Ramen ($11.80+), suitable for the less adventurous souls. The broth is said to be rich and creamy, and you can add your desired amount of chilli oil atop as well.

They also have a wide array of appetisers here, most notably the Housemade Pork Siumai ($10+), featuring three large pieces of juicy pork balls wrapped in a thin skin.
