Sugar Thieves: Popular Bakery With Viral Watermelon Cake, Fresh Shio Pan And More

With lots of cool bakeries and eateries sprouting up in Chinatown in recent months, our team has been frequenting the area more often lately. We’ve been to Pretty Good Muffins for their affordable muffins and delicious matcha latte, and we’re planning a visit to 1030 Breakfast Shop, a hawker stall with $2 lu rou fan and black sesame toast. Next on our to-visit list is Sugar Thieves, a popular bakery with over 21K Instagram followers at the time of writing.

Though big in terms of online following, Sugar Thieves is a relatively small bakery that operates on a pre-order basis. You can get limited bakes in-store, but you’re encouraged to order in advance to get what you really want. Their bakes change weekly, but the shio pan range remains a constant favourite among customers. The flavours they have rolled out so far, besides the plain option, include rotiboy, matcha red bean butter, garlic butter, truffle butter, and spring onion butter. A box of these six salted rolls is priced at $32!

Shio pan aside, the bakery is known for their gorgeous Watermelon Cake, inspired by the famous Black Star Pastry in Australia. It’s available in two whole sizes: the $48 option can feed up to eight people, while the $96 one is recommended for a group of 12 to 16. FYI: the OG watermelon cake from Black Star Pastry was touted as the world’s most Instagrammed cake by The New York Times in 2019.

If you’d like to try a slice first, you can get it at $9.90. The Watermelon Cake stars an almond dacquoise with layers of refreshing watermelon and cream, then topped with some candied grapes, strawberries, and edible petals.

For something more familiar, get their popular Ondeh Cake, available in a slice for $8 or as a whole cake for $38. FYI, the latter is ideal for six to eight people.

The ondeh cake features layers of fluffy pandan sponge, creamy coconut mousse, and coconut sugar chantilly with thin layers of gula melaka syrup. This decadent treat is finished with gula melaka desiccated coconut, which is finer than shredded coconut.

Sugar Thieves is a quick six-minute walk from Chinatown MRT Station, and they are open only on Fridays and Saturdays. If these bakes tickle your fancy, you can place your orders at 9850 4377!
