The man behind popular Wagyu butchery and sando store Gyu San is back with a bold new concept: Wagatomo, located just across the atrium in Guoco Tower, right above Tanjong Pagar MRT Station.

Also headed by ex-Akira Back chef Tomoyuki Kiga, Wagatomo’s headlining dishes star the same top-quality beef that’s sold at Gyu San. Go for the A5 Wagyu Pizza ($32++), where an ultra-thin and crisp base is layered generously with equally thin slices of raw Wagyu. It’s then accompanied by ponzu mayonnaise, yuzu kosho cream, truffle oil, and pickled myoga, AKA Japanese ginger.

Another cold dish to kickstart the meal is Momotaro Tomato ($16++), where the tangy-sweet fruit is paired with a Fuji apple vinaigrette and sweet corn puree.

Otherwise, Hokkaido Scallop ($27++) comes with a mango sambal, yuzu grated daikon, and a dressing of ponzu with amazu—a sweet Japanese vinegar.

The hot plates at Wagatomo include A5 Tri Tip ($98++), a six-hour slow-cooked cut of Wagyu rubbed in sansho spice that’s served a medium-rare pink.

On the side, you’ll get roasted root vegetables and charred onion puree.

Should you be Wagyu-ed out, there’s Pork Chop ($42++), prepared with Duroc pork, layered with fats that render the meat extra tender.

Glazed with ume and yuzu miso, it’s balanced out with an apple fennel slaw.

A dish that’s also available on their eight-course Omakase ($128++) menu is Scampi Ochazuke ($35++), a crustaceous spin on the classic tea-rice dish where the hot scampi dashi is poured into the bowl upon serving.

It’s accentuated with slices of raw scampi and smoked, pickled daikon, then topped with caviar for that final savoury touch.

If you’re at Wagatomo for lunch, consider one of their seven rice bowls, priced between $25++ and $62++. These come with a house salad and dessert. Go for the Don Tomo ($32++), where slow-cooked Wagyu is topped with a stewed daikon steak and bamboo shoots.

Alternatively, the Yasai Don ($25++) is a vegetarian-friendly option of charred shishito, shiitake, broccolini, and baby carrots, while the Tori Don ($28++) has buttermilk-marinated karaage and a boneless chicken leg.

End the meal with Monaka ($9++), comprising shiratama mochi, house-made matcha ice cream, and yuzu-accented azuki beans.
