Crystal Jade Pavilion Has A New Look And Menu With Duck And Foie Gras Crepe, Sautéed Pork Ribs

Crystal Jade Pavilion at VivoCity has a new menu

All, if not most of us, would have grown up with Crystal Jade being an integral part of our lives. They’ve got everything covered, from fast-casual concepts to Michelin-starred, atas establishments spread over more than 90 outlets across the Asian Pacific

Their latest, Crystal Jade Pavilion, offers semi-fine Chinese cuisine in a newly revamped space at VivoCity that overlooks the waterfront. Lined with floor-to-ceiling windows, you’ll also be treated to views of Sentosa as you enjoy the new menu, with highlights including a duck and foie gras crepe.

Start your meal with Fish Maw White Pepper Thick Soup with Sliced Pig Stomach ($18.80++ per person), a peppery, soul-warming bowl that nourishes and satisfies.

If you’re not one for the traditional soups, go for some delicate cold appetisers instead. Garnished with bright petals of edible flowers, these taste as good as they look.

The Chilled Homemade Tofu with Scallop, Bonito Flakes and Perilla Leaf ($18.80++) is unlike your typical traditional Chinese cold dish, with multiple layers of flavour and texture, including a briny crunch and pop of colour from tobiko. 

Another outstanding appetiser that marries old and new is Chilled Tomato with Roselle and Plum ($10.80++). This comes with eight brilliantly red cherry tomatoes, marinated with the hibiscus flower and plum to appetitising ends.

It’s almost a crime to skip the roast meats at Chinese restaurants, and at Crystal Jade Pavilion, they’ve one-upped themselves at the game. Inspired by the usual Peking duck skins in crepe wrappers, the Pan-fried Foie Gras and Sliced Roasted Duck Skin with Crepe comes stacked with pan-seared foie gras and crispy fu pi, AKA fried beancurd skin.

There’s a minimum of two portions, each priced at $18.80++. It’s a medley of crunch and creaminess in a neat package that might leave you tempted to order another.  

Also new to the menu is Sautéed Pork Rib with Sarawak Black Pepper ($32.80++). The coveted spice is used liberally here; its distinctive aroma and fruity notes elevating each meaty bite, without being sharply peppery.

On a more classic note, Crystal Jade Pavilion presents a luxurious rendition of Free Range Chicken with Yellow Rice Wine & Ginger served in Claypot ($32.80++ for half chicken, $59.80++ for a whole chicken).

The traditional Hakka dish is known for its therapeutic, nourishing properties, helping with blood circulation and dispelling wind. Served bubbling hot in a claypot, the thick, savoury broth is best paired with plain rice.

You’ll also be able to perceive the difference that free range chicken makes: the meat has more bite to it, without the powdery finish you sometimes get otherwise.

The noodles in Pan-fried Scallop with Fish Paste Noodle ($16.80++ per person) make for a carb dish that stands out from the usual suspects.

If you’re a fan of springy, bouncy textures, you’ll love these thick noodles that are reminiscent of Sanuki udon, but eat like handmade fishballs without the fishiness.

Peach gum is widely feted for promoting the production of collagen for healthier, better skin, among other medical benefits. So it’s no surprise that it makes an appearance in Cheng Tng Sweet Soup with Six Treasures and Golden Luo Han Guo in Whole Fresh Coconut ($13.80++ per person)
