Singaporeans have mixed opinions about Newton Food Centre, but whether you think the hawker centre is pure tourist fodder or full of hidden gems, there’s no denying that Hup Kee Fried Oyster is one of the eatery’s crowning gems.

Hup Kee Fried Oyster’s reputation goes beyond its showcase in Crazy Rich Asians. The orh luak stall has a heritage that dates back to 1966 when it was operating out of Glutton Square, a popular street food venue that was formerly in the Orchard area. They then moved to their current home in Newton Food Centre in the early ’70s.

You can expect to see long queues at the stall, especially if you’re swinging by during peak mealtimes. They’re famous for having orh luak that’s the right balance between crispy egg, chewy starch, and plump oysters. The stall also doesn’t use pork or lard in their cooking.
Another winning point with Hup Kee is their chilli sauce. Oyster omelettes are usually big on intense flavours, so it requires a bit of uplift from a citrusy chilli dip. The version here hits the spot, with a decent amount of heat, and a generous dose of calamansi juice for zing.

Prices start at $8, but there are also $10 and $12 portions available. Some may say this is quite a steep fee for orh luak, but it is Newton Food Centre after all.
If Newton is just a bit too out of the way for you, then you’ll be pleased to know that there’s a Hup Kee offshoot in Geylang, at Sing Lian Eating House. This one doesn’t have the same crowd, so it’s great for skipping the queues too.
