Orchid Live Seafood has become synonymous with lobster porridge—after all, the restaurant is credited with the invention of the dish.
The fresh lobsters that go into the Live Lobster Porridge (from $72++) are live catches, and diners can observe as the staff takes them out of their tanks to be cooked Teochew-style. Thanks to four hours of low-heat simmering, the porridge broth is as umami as it gets, and the lobsters themselves are incredibly succulent.
