I love cheesecakes in all forms: molten, Basque, soufflé—I don’t discriminate when it comes to my favourite cake flavour. So when I started seeing viral TikToks of Plus65 Cheesecake, I immediately sent it to my editor with a not-so-subtle hint to send me down to cover it. When she said yes, I was over the moon.
Tucked away at The Promenade @ Pelikat, Plus65 Cheesecake’s entire menu revolves around a single item: a Signature Basque Burnt Cheesecake. The dessert is freshly baked in-house daily by owner and baker Aileen, who brings over 10 years of baking experience to the shop.
Plus65 Cheesecake has only been open for two months, but it’s already built a steady following. On weekdays, the shop sells around 10 whole cakes a day, jumping to about 30 over the weekend. Every cake is baked fresh the day before it’s sold, then chilled for eight hours before it’s ready to go, a process Aileen manages entirely on her own.
She used to take on custom cake orders too, but has since scaled back to focus solely on the cheesecakes. There aren’t any concrete plans for a second cafe outlet just yet, though she hasn’t ruled it out for the future.
Plus65 Cheesecake’s cosy loft unit features a distinctly cottagecore aesthetic. Every corner is dressed with pieces from Aileen’s own vintage collection, turning what could’ve been a plain little shop into a beautifully curated, homely nook. While it’s more of a takeaway spot, there are a few seats available in the shop—customers who want to have a taste before buying the cheesecake can even get a slice on the house.
Each 7-inch whole cheesecake comes with a beautifully burnt top, a rich molten core, and a house-made sponge cake base rather than the usual biscuit crust you’d find in most Basque burnt cheesecakes.
Where a biscuit base gives a crumbly, textured bite, this one builds in layers: a soft sponge base at the bottom, topped with a thick layer of creamy molten filling, finished with a caramelised top. I recommend leaving the cake out a little longer as it softens even further, turning almost mousse-like by the time you get to the last few bites.
Sweetness-wise, Plus65 intentionally holds back. Customers often describe the cheesecake as “just nice,” a deliberate choice to cater to Asian palates that typically prefer less sweet desserts. It clearly pays off, too—I went through three slices in one sitting without the cake ever feeling overly rich or cloying.
While Plus65 itself only sells whole cakes at their Pelikat shop, slice portions are available at Bouche, a matcha cafe in Holland Village run by Aileen’s nephew. There, you can get a slice of the Original for $6.90, or the Matcha spin-off for $7.90, if you want to try something different.
