Elevated French bistro fare found in a coffeeshop? Say no more. Ma Cuisinette, a French-owned hawker stall, has an offshoot at a coffeeshop near Chinatown Complex. The stall things simple in a no-frills, compact menu—with the Mussels in Cream with Rice ($10) headlining the show. The Bouillabaisse ($11) is also a top pick, AKA classic French fish stew served with rice. Those who appreciate something simpler can go for the Ham Carbonara ($8.90), a vibrant pasta dish topped with a runny egg.

Algerian food is already pretty unheard of in Singapore, and MareMyst (which translates to “mysterious sea”) serves up just that at Golden Mile Food Centre. Here you’ll find the quintessential Algerian Chtitha Lhem ($8), a beef or mutton stew over rice, and the Chermoula Chicken Rice Bowl ($8), topped with baked chicken and a sauce made with herbs, garlic, lemon, and various spices. The Cheesy Chicken Mash Potato Bowl ($8) is also a mouthwatering option for those who prefer a different form of carb.

Eightstify Western at Maddox Canteen Bar is where you want to be for handmade pasta with premium ingredients. Their Squidink Tagliatelle ($19.80) is a sight to behold—inky tagliatelle tossed in a creamy tomato sauce, and topped with smoky, grilled tiger prawns. The Mini Lobster Tagliolini ($21.80) is equally impressive, blending rich lobster with a zesty tomato base. There are more pasta options on the menu, but do note that the handmade pastas are only available during dinner service.

Turkish kebab might not be the most unique hawker entry, but Gaziantep Delight at Holland Drive Food Centre serves it up using a shiny kebab-making robot that is said to cost $16K! The contraption mechanically shaves off meat, ensuring each piece in their Mixed Doner Kebab ($8.50) is at the optimal thickness—hearty chicken and lamb balanced with veggies and garlic yoghurt sauce, all hugged in a wrap. The Kunefe ($11.50) here is also a must-try, with the crispy and fluffy pastry surrounded by a sea of cream.

Amei Western Grill at HollaKopi Bukit Merah has a rather interesting niche: unique Western menu items such as Chicken Cordon Bleu ($7.90), which features a chicken breast stuffed with ham and melted cheese, or plates of risotto topped with tobiko and caviar! The Seared Scallops Risotto ($8.90) is chock-full of scallops and comes with a firm bite of Arborio rice, balanced out with spinach. Other popular risotto options include the Mushroom Risotto ($7.90) and Prawn Risotto ($7.90).

Eggs over rice dishes have been a popular concept lately—cue our Danlao review—and Ryotai, a hawker stall located in Guan Guan Kopitiam at Paya Lebar, brings to the table a blend of Japanese and Thai influences. Meet the Thai green curry omurice, which you can enjoy in the Chicken Karaage Eggrice ($8.90) and the Prawn Katsu Eggrice ($13.90) variations, among others. Their curry is creamy and aromatic, with the tornado omelettes silky, smooth, and well-seasoned.

Though primarily a kopi stall specialising in Vietnamese coffee, Life Coffee at Amoy Street Food Centre has an extensive menu of matcha lattes and beverages—all priced at only $3.80 each! Their matcha is sourced from Kyoto, Japan, and you can get it in variations of Matcha Strawberry Latte, Matcha Mango, Caramel Matcha Latte, Honey Lemon Matcha and more. Loh mei, AKA loh kai yik, is a rare Cantonese dish that’s difficult to find in the Singapore hawker scene. In fact, there is only one stall left that offers the dish: Loh Mei Specialist at People’s Park Food Centre. As per tradition, the Loh Mei (from $5) here makes extensive use of red fermented beancurd into a rich braise, where meat, tofu, vegetables and more are infused with those strong flavours. What results is a distinct blend of sweet and salty notes. We heard that the uncle who owns this stall has yet to find a successor, so go try out this unique dish while you still can!

Colombian-style chicken is something unheard of in Singapore, and you’ll only find it at Tee Kitchen in Golden Mile Food Centre. Their Colombian Chicken Set ($5.50) is served with special rice and salsa, and features a chicken thigh doused in a tangy gravy, seasoned well with tomatoes and herbs. Some Colombian natives have even praised it for reminding them of home! For something slightly more elevated, you can go for the Baked Salmon Set ($8), prepared with a generous heap of garlic, lemon, and herbs.
