A soft, spongy matcha-flavoured cake dripping with creamy White Rabbit Candy sauce encased in a crunchy crust, this definitely isn’t your mainstream lava cake. For a classier presentation of an equally unusual combination of flavours, Speculoos Avalanche ($13.90+) from Non Entrée Desserts should be your go-to. It’s a speculoos lava cake that rests atop a thin disc of almond nougatine, suspended over a glass bowl containing cookie crumble and a scoop of salted caramel ice-cream. Thai Milk Tea Lava Cake ($10.80++) served with a scoop of cold coconut ice-cream makes for a good alternative to more typical Thai desserts such as mango sticky rice and red ruby.

This lava cake, too, comes with a scoop of coconut ice-cream. Despite being a Thai restaurant, Haha Thai gives proper dessert cafes a run for their money with its assortment of delectable lava cakes that stands out.

When it comes to lava cakes, Mao Shan Wang Lava Cake is probably as Singaporean as it gets. A handful of cafes around the island that are under the same company serve this durian dessert. The most popular would probably be Ice Edge Cafe, and their 2.0 version, Chapter 55, that offer it at $14.80+ with a scoop of ice-cream of your choice. Many opt for mao shan wang ice-cream, but they have a wide variety of flavours at each cafe, so feel free to try a crazy combination! Savoury, the halal sister of the two, offers the same deal.

Before you jump the gun and assume this is just another ordinary molten chocolate lava cake, Osia, a Michelin-starred restaurant, puts an unexpected twist on this classic – a side of black-peppered vanilla ice-cream. Valrhona Hot Chocolate Soup ($20++) is a molten soup of Valrhona chocolate, with only the top being an actual cake, but the unique ice-cream and sesame crisp make it one-of-a-kind. 100 percent not basic.

Here’s one for those who want a boozy kick. Vodka Chocolate Lava Cake ($13++) from Museo is a chocolate lava cake filled with a molten centre infused with vodka, served in a syringe through the middle, so you can control the amount of vodka you’d like. You can also choose the flavour of gelato you want, although we would recommend Champagne Vanilla.
