I’m not a morning person, period. And as much as I’d love to wake up to a glorious stack of pancakes for breakfast, beauty sleep wins every time. But hey, who said pancakes were only a breakfast thing? In my world, these babies were made to be enjoyed any time of day – brunch, lunch, you get the drill.
While it seems like they’ve been overshadowed by their fraternal twin, the waffle, my faith in this fluffy treat will never die. Here’s a list of pancakes that might just toss you over to the flip side.
Pacamara Boutique Coffee Roasters is one of my absolute favourite cafes, and things only got better when I discovered their Matcha Pancakes ($17.50). The pancakes come with adzuki ice-cream and paste, berries, green tea KitKat chunks and a generous amount of warm vanilla sauce. My only complaint is it could be slightly more moist but Pacamara still has my heart when it comes to good, delicious and cheap cafe fare.
