Hidden deep inside Chinatown Complex Market and Food Centre is Zhonghua Rougamo, a new-ish stall serving handmade, authentic Chinese burgers AKA rougamo. The stall is run solo by Mr Michael Lim, who was taught how to prepare these dishes by a chef from Xi’an, Shaanxi Province, where rougamo originated.
Zhonghua Rougamo prides itself on making its food upon order to ensure customers receive a piping hot burger for optimum flavour and freshness. Mr Lim also shared that his stall is the first in Chinatown Complex Market to sell rougamo!
The Pork ($4.80) variation is the best-selling item on the menu. It consists of slow-cooked braised pork, tomatoes, and lettuce, sandwiched between two slices of crispy flatbread.
Meat lovers would appreciate the generous portion of pork given. The proteins are also super fragrant, as the pork is marinated overnight in a house-made braise. However, it can be dry—in my colleague’s words “I feel like I need a big cup of water to wash it down.”
Besides the pork variation, the stall also has Chicken ($4.80), Beef ($5.20), and Fish ($4.80) for those who prefer a seafood alternative. These alternatives feature a deep-fried patty that resembles a typical burger, unlike the pork version.
Zhonghua Rougamo also serves a variety of noodles, such as the Sour And Spicy Noodles ($5.80) AKA suan la fen, Xi’an Cool Ho Fan ($5), and even Mushroom Soup ($4.80). The stall attracts many locals and tourists alike, so head down early to get your share!
