Brotherbird Bakehouse opens at Raffles City with fresh croissants

PSA: Popular bakery Brotherbird Bakehouse has launched yet another new outlet, this time in town! Located at Raffles City Shopping Centre, next to City Hall MRT Station, this marks the IG-famous homegrown bakery’s fourth branch.

The new store is unique in that it has a “bake-on-site” concept. What this means is that while the other outlets receive their bakes from a central kitchen each day, the Raffles City branch bakes a new batch of croissants each hour. This means that when you buy them, the croissants are at their freshest in terms of texture and taste.

For the uninitiated, Brotherbird Bakehouse is a trailblazer in Singapore when it comes to offering flavoured and mochi croissants. Their reputation is built on their creative menu with a wide variety of inventive flavours and their carefully crafted monthly bake boxes.

The menu changes by the month. September sees a whopping total of 15 croissants available in store, including best-selling ones such as Mentaiko Prawn Twice-Baked ($7.02), filled with mentaiko prawn stuffing and mozzarella cheese. “Twice-baked” refers to Brotherbird Bakehouse’s technique of producing extra flaky and crispy croissants.

Another crowd-pleaser, the Ham & Cheddar Twice-Baked ($6.48), is a regular feature in their monthly selections. This savoury snack features honey-baked ham with cheddar cheese, tucked within Brotherbird’s signature butter croissant.

If you have a sweet tooth, go for croissants such as the Rocher ($5.40), which is filled with hazelnut and half-dipped in a dark chocolate glaze—essentially a riff on the popular Ferrero Rocher chocolate.

Alternatively, the Matcha Almond Twice-Baked ($6.48) is a showstopping croissant comprising an earthy matcha almond cream and hidden bits of mochi.

Then there’s also a Peanut Butter & Jelly Twice-Baked ($5.40) flavour that’s new on the menu this month. This croissant is a nod to everyone’s childhood favourite sandwich, except that it’s now reconstructed in laminated pastry form.

Don’t leave without trying the Cinnamon Knots ($5.40), too. A play on the classic cinnamon bun, this bake swaps out sweet bread for laminated dough, so you get swirls of cinnamon sugar in between flaky layers of pastry, topped with a cream cheese glaze.

Those who love fruity flavours should definitely go for their Lemon Meringue Croissant ($5.40) and Raspberry Pistachio Danish ($5.94). The former stars a tangy lemon curd filling topped with torched meringue, while the latter sees a hidden surprise of pistachio frangipane and raspberry compote.
