New Japanese-Inspired Bakery In Orchard With Unagi Shio Pan, Mango Mochi Donut And More

Bakery lovers on the hunt for something beyond a plain butter croissant, take note: Cloudmills has opened on Claymore Road, a 10-minute walk from Orchard MRT Station!

The takeaway-only bakery offers over 25 sweet and savoury bakes a day, built around five core dough and batter families: doughnut, sankaku salt bread, cake (madeleines), laminated pastry, and shokupan. Each base is developed to stand on its own before toppings and fillings are considered.

Consultant Genevieve Lee, runner-up on the first season of MasterChef Singapore and the name behind Sourbombe and the now-defunct Shio & Sato, heads the lineup and bakery team.

An interesting standout from the savoury selection is the Unagi Moon ($7.20), which layers tamagoyaki, grilled unagi, and soy-marinated egg yolk into a sankaku shiopan, a triangular Japanese salt bread. The Banh Mi ($6.90) is another shio pan item, packing lemongrass pork belly, pâté, pickles, and herbs together. Both the unagi and the pork belly are grilled to order over binchotan just before serving for a lightly smoky finish.

On the sweeter end, the Mango Mochi ($6.90) is an oval doughnut wrapped in mochi skin and filled with mango cubes and mascarpone, while the Kombu-chan ($3.50) takes the madeleine savoury instead, filled with kombu cream cheese and finished with seaweed powder.

Other highlights include a Matcha Ichigo (price TBD) anpan, a classic pairing of red bean with matcha and strawberries, and a Bluberri Ever (price TBD) doughnut.
