Hands up, if you’re a noodle fan like me. You’ll want to check out Kai’s Handmade Mee Hoon Kueh—a relatively new stall in Old Airport Road Hawker Centre selling handmade ban mian and dry mee hoon kueh!
The stall is helmed by an ex-pasta chef who’s cut his teeth in popular restaurants including Salted & Hung, so you can expect the handmade noodles to be springy and al dente.

If you’re visiting during peak meal times, be prepared to queue. Furthermore, each bowl is cooked to order, so you’ll need to factor in some waiting time for that.

Regulars swear by their Dry Ban Mian ($4), which comes with fishballs, handmade meatballs, housemade hae bee hiam, and a poached egg on the side. Each serving is topped with lashings of fried shallots and anchovies for added crunch and umami.

The Dry Mee Hoon Kueh ($4.50)Â is another equally popular pick. This bowl features perfectly cooked noodle sheets tossed in the same dark sauce and chilli oil mix, topped with the same toppings. Should you wish to zhng up your meal, you can add an extra poached egg or an additional serving of noodles for $0.60 each.

Made fresh without preservatives, the noodles are hand-kneaded every day, and then stretched out using a noodle machine. The mee hoon kueh is hand-torned into chunky sheets right before it’s cooked.

If you’re in the mood for spicy, try their Tom Yum Noodle Soup ($4.50), made with fresh lemongrass and kaffir lime. There’s also a lesser-seen Miso Noodle Soup ($4.50) if you want something different!
