Get Smoked Meats From This Pop-Up At The Burning Oak By An Ex-Chef From The Famous LeRoy & Lewis

A familiar name among Easties for its quality and value-for-money meats, The Burning Oak will be launching a special three-day-only pop-up menu from 10 July to 12 July 2020. The pop-up will feature two dishes: Wood Smoked Duroc Pork Belly Chop With Honey Butter Sauce ($22) and Wood Smoked Duroc Pork Ribs With Tamarind Glaze ($22).

Duroc pork features heavily on the menu, and it’s known for having a high degree of marbling. The mains will be accompanied by a special North Carolina-style cornbread, classic mac & cheese that’s made with a bechamel sauce, and a red cabbage slaw.

The man behind the pop-up menu is Chia Jue Mao, who last worked at the famous Texas BBQ house, LeRoy & Lewis. The American trailer truck is known for its smoked dishes and serves up exciting cuts of meats. They’ve most recently been featured on Eater for being the most unique barbecue in Austin, Texas. Due to Covid-19, Jue Mao decided to be back with his family in Singapore. 

Jue Mao will share what he has picked up over the years with his new pop-up menu, with smoked meats being his biggest takeaway from his time in Texas. I’m having my eyes on the smoked duroc pork chop, which is pre-smoked with oak wood for four hours before being slow cooked in a honey butter confit for two hours. 

It’s not all about American flavours though. Chef-owner Jeremy Han of The Burning Oak has added a touch of Singaporean flair by pairing a tangy tamarind glaze with the smoked ribs. Its tartness ought to meld in very nicely with the robust smoky flavours.  

Orders are limited, and it’s best to pre-order by sending a message to The Burning Oak on their Facebook page or WhatsApp.
