In this writer’s opinion, motsunabe, a hotpot dish featuring beef offal, is one of the best Japanese dishes out there. While it’s not widely available in Singapore, you can get a good rendition of it at Goku Japanese Restaurant. A pot of Beef Intestines Hotpot starts from $34++, which gets you melt-in-your-mouth offal in a flavourful, umami-rich broth.
