The broth here is naturally sweetened by the generous addition of Chinese cabbage, which also lends a nice crunch to the soft white noodles. I’ve seen many stalls in food courts selling their own take of seafood white bee hoon, but countless come short in terms of quality and taste. At $12, the beehoon comes with two whole crayfish, clams, and prawns, and is best shared with a friend. The stock is salty and sweet at the same time, while the bee hoon is soft and absorbs the addictive broth well.

For only $5, you have enough to fill two small eaters if they finish the soup till the last drop – which they will. You can taste both the sweetness from the seafood and the smokiness from the char of the wok, making this one of the more flavourful seafood white bee hoon of the lot.

For a more satisfying sliced fish fare, order the Lala Sliced Fish White Bee Hoon ($5) from Joyous Seafood White Bee Hoon. The plate of bee hoon first caught my eye because of how thick and fresh the slices of fish looked. They are also generous with the clams, which add a sweet tang to the the stock that has a strong garlic taste and is peppered with smaller bits of pork lard.

Surrounded by warehouses, Famous JB Firewokz is a well-hidden gem in the West and is relatively quiet on most days. Here, $5 gives you a plate of saucy white bee hoon, vegetables, egg, prawns, squid, and fish. The stall also serves up zi char dishes, and is a great place for the family to feast at.

Good news for Westies! White Restaurant has opened a branch at IMM. Contested as one of the #OGs of seafood white bee hoon, their version definitely doesn’t disappoint. The entire dish is well-seasoned and flavourful, as if a broth of chicken and seafood was simmered for days. When I’m famished, this $6++ plate of bee hoon is always something I crave for.
