ICYMI: Tom’s Palette has just reopened at 51 Middle Road! They’ve been around since 2005, making them one of the OG ice cream cafes in Singapore. The gelato parlour was previously situated in Shaw Towers, before moving to their Bugis location in 2020.Â
Tom’s Palette is most known for their unique gelato flavours with an Asian spin. At this revamped space, gelato fans can look forward to choosing from 36 flavours at any one time. They have a whopping total of 120 gelato flavours in their repertoire, which will be rolled out on a rotational basis.
The latest addition is Maple Pecan, which stars pound cake soaked in pure maple syrup, toasted pecans, and Fior di Latte (milk) gelato.Â
There are nine mainstay gelato flavours that will remain on the menu, including Wild Strawberry Balsamic, Rum & Raisin, Italian Dark Chocolate, and Granny’s Favourite—an indulgent combination of Chocolate Malt gelato with cookie dough and chocolate chips.
The gelato is priced at $5.20 for a Single Cup and $9.60 for a Double Cup. You can top up $1.20 for a fresh waffle cone too.
If you’re visiting in a group, get the Tom’s Palette ($29.80) to share. This platter comes with six scoops of gelato—the flavours will change from time to time.Â
Alternatively, go for the Belgian Waffles ($7.50) with Maple Syrup ($1.50). Top it with two scoops of gelato by adding on $9.60—we chose Soya Bean Fritters AKA dou jiang you tiao, and Taiwanese Sesame Brittle.
Each serving of waffles comes with a free topping that’s subject to change; this time, we got crunchy you tiao sticks that added a lovely textural contrast to the creamy soy milk-flavoured gelato.
The Taiwanese Sesame Brittle gelato was also excellent when paired with the hot waffles. You get a fragrant nuttiness from the Black Sesame gelato, zhnged up with even more sesame in the form of a brittle.
Each set of waffles is also baked to order. They’re light and buttery with a slight crisp on the outside and a delicious cake-like middle.
If you’re feeling adventurous, we recommend the White Chocolate Nori gelato, another mainstay on the menu. This sweet-savoury pairing features Japanese Seaweed gelato studded with white chocolate-coated almonds.Â
Otherwise, the cult-favourite Salted Caramel Cheesecake is another fantastic option that combines Australian Cream Cheese gelato with house-made salted caramel sauce.
A bit on their refreshed interiors: the cafe now sports a bright and modern look, along with a larger seating capacity that fits up to 40 diners. According to a brand representative, they shifted their gelato-making area to a central kitchen to make for a bigger dining space.
There’s also a mix of seating arrangements to choose from, including a long island table in the middle with power points for solo diners, and lounge seats for a comfier experience.
