Gamo Bakery: Muslim-Owned Cafe With Japanese-Inspired Cakes And Viral Circle Croissants

GAMO is a Muslim-owned, Japanese-inspired bakery in Bras Basah

We love and highly recommend SSAK3 Korean BBQ at Bras Basah Complex, so if you’re headed there anytime soon, consider popping by earlier to have some coffee and pastries at the newish bakery GAMO. The Japanese-inspired bakery and cafe is also Muslim-owned, and even has their version of the viral croons on the menu too!

 

Co-owner Shah Sarifi has been a pastry chef for close to 10 years, with experience baking at top hotels before she decided to start her own cafe.

All of the cakes and pastries at GAMO are baked with premium ingredients, such as Elle & Vire butter and T55 French flour, which is flown in from France.

Start your tea time with their Matcha Yuzu Lychee Cake ($11), a delicate confection of matcha mousse whose bitterness is offset with the Japanese citrus. There’s also Hazelnut Royaltine ($12.50), a shiny dome that encases an ultra rich centre of hazelnut: Nutella lovers, this one’s for you.

For a fruit tart unlike the usual ones, order a Strawberry Guava Mochi Tart ($12.50) that sees a buttery tart shell piped with house-made strawberry guava curd. It’s then topped with strawberry caramel and cubes of house-made milk mochi!

If viennoiseries are more your thing, GAMO’s got those too. The Pain au Suisse ($6) is one such laminated pastry, filled with chocolate that spills out of its sides, and crème Anglaise, or custard.

Come weekends, a very limited quantity—about 30, to be precise—of croons, AKA the viral circular croissants that every patisserie is making these days, are up for grabs. They come in two flavours: Kaya and Goma, and are priced at $7 a pop.

Go for the Kaya if you fancy the local spread. Otherwise, the Goma is said to have a super gao centre of rich, earthy black sesame.
