Maxwell Food Centre is a treasure trove of foodie gems, from popular pancake stall Sweet Rex to HK-inspired Danlao by ex-Eggslut chefs. This time, though, weāre shining the spotlight on something more traditional: Hup Kee Wu Xiang Guan Chang.
This heritage ngoh hiang stall has been around for almost a century, using the same family recipes that have been passed through three generations. Whatās different about Hup Kee is their Hokkien-style wu xiang, which are all painstakingly handmade and double-fried to order.
Choose from a small selection of items on display, including their signature ngoh hiang ($1) and Chinese sausage (price varies) AKA guan chang. Youāll also find familiar snacks such as fishball ($0.50), tau kwa ($0.80), and spring roll ($0.50) to accompany your plate of fried bee hoon ($1).
In case you didnāt know, Hup Kee is said to be one of the last few remaining stalls selling traditional Hokkien ngoh hiang. Here, their ngoh hiang is significantly thinner than most versions youāll find at other stalls. Nonetheless, each piece is generously filled with five-spice-infused meat, and then rolled into thin beancurd skin and deep-fried till crispy ends. The snack leans sweet but is packed with flavour.
Then thereās also the lesser-seen guan chang (ēč ) thatās displayed at the stall. This old-school, Chinese-style sausage comprises lean pork filled with sausage casing thatās made of intestines. Pair it with the two dips on the sideāthe sweet and sticky pink sauce or the light and tangy chilli sauceāor enjoy it alongside the bee hoon.
If you want something quick and fuss-free, Hup Kee offers set meals so thereās no hassle to mix and match. Sets are priced from $5, featuring a portion of fried bee hoon piled with various deep-fried toppings. Those who want to focus on the liao can also opt for the sharing platters, priced from $8.
