Originally from Taichung, Taiwan, Spicy Noodle is best known for their handmade noodles tossed in a secret Master Chilli Oil, which has been branded by regulars as “the Hermès of chilli oil”. The brand, which has been around since 2017, is said to sell over 3 million bowls each year.
The oil goes through a five-step process that includes hand stir-frying, simmering, and eight hours of manual stirring. You get a layered flavour profile that ranges from seared beef tallow and cumin to Sichuan peppercorn.
