If you’re a fan of bak chor mee, you probably cried when 58 Minced Meat Noodle announced its temporary closure at Taman Jurong Hawker Centre. Thankfully, you can wipe your tears away, as this famous stall has opened an outlet at OSG Bar + Kitchen.
Since it first opened in 1973, 58 Minced Meat Noodle has garnered a loyal fanbase with their unassuming bowl of minced meat noodles. You won’t find meatballs or dumplings in their Bak Chor Mee ($5/$6), as the stall relies on a simple but generous trio of minced pork, sliced pork, and pork liver.

The pork liver is undoubtedly the star of the show here. Although it’s sliced thinly, it’s blanched to perfection and boast a deliciously tender bite. Brimming with meaty richness, the pork liver bolsters the noodles with its savoury undertones.

Along with creamy pork lard and a sweet yet salty sauce, you’ll get a mouthful of robustly flavoured noodles. Cooked till al dente, these noodles will hook you in with their addictively chewy bite.
Seal off this full-bodied treat by mixing a dollop of their sambal chilli paste. Laced with tinges of hae bi (dried shrimp), the sambal chilli heightens the noodles with its umami-packed kick.
Otherwise, add a few spoonfuls of black vinegar for a hint of tartness, which supplies the dish with a rounder taste.
