Instead of coffee and rum, we are using milk to keep this Biscoff “Tiramisu” kid-friendly, and caffeine-free, so all your nieces and nephews can eat it too. Taking out eggs from the recipe also means less time and less effort is needed for the sweet treat.

Add a tablespoon or two of the Lotus Biscoff spread into the mascarpone cheese mixture for more of the addictive cookie butter flavour. If you want it to be more intense, feel free to slap on as much as you please.

We decided to layer the tiramisu into individual containers to make it ideal for delivering and gifting. As usual, start with the biscuit followed by the cream and repeat. Seal it all off with a heavy-handed serving of Lotus Biscoff spread that’s first warmed up into liquid gold in a microwave. Sprinkle some crushed Biscoff biscuit bits and place in the fridge to chill for a few hours before serving.

Ingredients

  • 500 ml whipping cream
  • 500 ml mascarpone cheese
  • 100 g sugar
  • 2 tsp vanilla extract
  • 2 tbsp Lotus Biscoff spread
  • 500 ml milk
  • 40 pieces Lotus Biscoff biscuits
  • 1 bottle Lotus Biscoff spread

Instructions

  • Whisk up whipping cream, sugar, vanilla extract, and Lotus Biscoff spread until soft peaks form.
  • Whisk mascarpone cheese separately.
  • Fold mascarpone cheese and whisked cream mixture together until well combined.
  • Prepare four containers to layer Lotus Biscoff biscuits and whisked cream cheese mixture
  • Dip biscuits into milk and place flat into the container.
  • Layer a generous serving of the cream cheese mixture atop the biscuits. Repeat for all containers, until they are full.
  • Melt a bottle of Lotus Biscoff spread in the microwave, and pour melted spread across the top layer evenly.
  • Garnish with more Lotus Biscoff biscuit crumbs, and chill in the fridge overnight (or at least 3 hours) before serving.

2. Bergedil Sticks

Once again, TikTok is chock-full of innovative fried potato stick recipes, and it sparked the idea of Bergedil Sticks. This well-loved dish is usually sold as an add-on at nasi lemak or nasi padang stalls, but when rolled into handy deep-fried sticks, dipping into kicap manis—or sambal kicap manis—makes them simply irresistible.

While it seems like the recipe involves quite a list of ingredients, there are only four straightforward steps to it. Prepare around six to seven potatoes by boiling them, and measure out aromatics such as cilantro, fried shallots, garlic powder, cumin powder, white pepper, salt, and also some cornstarch to absorb moisture.

Simply pour all ingredients into a bowl and mash them together till everything is well combined.

Next, it is important to note that a very gentle hand is required to shape the mashed potato mixture into thick sticks. A pro tip to make sure that the potato doesn’t stick to your fingers is to just oil them up first!

  • 1 tsp cumin powder
  • ¼ tsp white pepper

  • 2 tbsp cornflour
  • 1 egg, beaten

Instructions

  • In a bowl, mash potatoes, cilantro, fried shallots, garlic powder, cumin powder, white pepper, salt, and corn flour together.
  • Oil hands to shape and gently roll mashed potatoes into sticks.
  • Preheat a pan of cooking oil on medium heat. When the oil is hot, dip potato sticks in egg and slide them carefully into the pan.
  • Fry them for about 3 minutes, and when they turn golden brown, place them on a cooling rack, then serve with a sauce of your choice.

3. Grilled Samyang Chicken Tikka

Again, just like the begedil sticks, this chicken tikka ingredient list seems long, but most of them are just herbs and spices to zhuzh up the protein-rich chicken breast. Of course, we are adding sachets of Samyang sauce for a kick of heat as well.

Watch as the chunks of chicken turn a delicious orange when you mix the tandoori powder, chilli powder, cumin powder, salt, garlic, coriander, Samyang sauce, and lime juice together till they are well combined. Cover the bowl up and let the aromatic marinade sink into the protein for at least 30 minutes in the fridge. The longer you marinate, the deeper the flavours that get absorbed by the chicken.

The last step involves alternating the chicken with colourful vegetables such as green, red, and yellow bell peppers, onto bamboo skewers. Onions can be used too! When grilled, all of the vegetables will caramelise on the edges, making each bite a sweet respite against the fiery Samyang chicken chunks.

Grilled Samyang Chicken Tikka

Ingredients

  • 600 g boneless chicken
  • 1 tbsp tandoori powder
  • 1 tbsp chilli powder
  • 1 tbsp cumin powder
  • 1 tbsp olive oil
  • 1 tsp salt
  • 1 tbsp garlic, minced
  • 2 tbsp coriander, chopped
  • 2 tbsp Samyang sauce
  • 1 large lime
  • Bell peppers
  • Onions

Instructions

  • Mix chicken, tandoori powder, chilli powder, cumin powder, olive oil, salt, garlic, coriander, Samyang sauce, and lime in a bowl, and allow chicken to marinade for at least 30 minutes in the fridge.
  • Preheat oven to 180°C and prepare chicken tikka by alternating the chicken with onions as well as green, red, and yellow bell peppers onto bamboo skewers.
  • Lightly oil the pan before placing skewers to avoid sticking.
  • Cook in preheated oven for 25 minutes, turning once in between. Serve hot.

4. Prata ‘Baklava’

Desserts are a must-have for all gatherings! Baklava is a traditional sweet pastry that’s typically made with filo pastry, coarsely grounded nuts, and syrup.

We made it noob-proof and super simplified by using frozen parathas, or prata, with chopped nuts in this Prata ‘Baklava’ recipe.

If you’re short on time or you don’t own a blender, just use a knife to chop up the pistachio nuts before adding sugar to make the filling. The coarse bits will actually add a nice crunch to each bite of the finished product.

This hack is so easy that you can start layering with the frozen prata right out of the freezer. Start with a brush of melted butter on the cake pan to avoid sticking, followed by a prata, another brush of butter, a dusting of pistachio and sugar filling, back to a prata, then butter, then filling, and repeat until you reach the fifth prata as the final layer on top.

After a final brushing of melted butter on top, use a sharp paring knife to cut beautiful geometrical shapes like diamonds to up the #aesthetics game of your pastry dish. Bake it for around 40 minutes, or keep an eye on it until it turns a glorious golden brown.

Ingredients

  • 5 pieces frozen prata
  • 1 cup pistachios, coarsely grounded
  • 3 tbsp sugar
  • melted butter
  • ¼ cup water
  • ¼ cup sugar
  • 3 drops rose syrup

Instructions

  • Mix ground pistachio and sugar and set aside.
  • Brush melted butter onto cake pan. Add prata, brush melted butter, add nut mixture, add prata, and repeat you reach the top with the fifth prata.
  • Brush the fifth prata with melted butter, and use a paring knife to cut designs onto it.
  • Bake in a preheated oven of 170°C for 40 minutes or till golden brown.
  • In a small bowl, add water, sugar, and rose syrup and place into a microwave for 30 seconds. Mix till sugar is well dissolved.
  • When the baklava is ready, drizzle rose syrup onto hot baklava and garnish with pistachio. Let the baklava rest and chill in the fridge for at least 1 hour before serving.

5. Prata ‘Quesadillas’

This second prata hack is perfect for a hearty breakfast to start your day right. These Prata ‘Quesadillas’ are packed with nutrient-rich eggs, healthy diced vegetables, savoury chicken sausages, and tasty cheese, keeping you energised and feeling full for a longer period of time.

The best part of this recipe is actually how quickly you can prepare and cook the dish. Start by pan-frying or air-frying a piece of frozen prata. While waiting for it to cook, dice up your favourite vegetables and chicken sausages.

Arrange the sliced sausages onto the pan and pour the mixture of egg, vegetables, and black pepper all over.

Immediately place the prata in the centre and cover the pan with a lid to allow the egg to cook completely. With an expert toss, flip the prata and egg over onto the other side. Otherwise, use the age-old method of using a plate to do the flipping instead.
