Takayama: Award-Winning Omakase Restaurant with Famed Donabe Rice and Miyazaki Beef

Takayama has seasonal omakase at OUE Downtown Gallery

Helmed by world-renowned Chef Taro Takayama, the eponymous Takayama is an award-winning omakase restaurant that highlights the best of Japan’s seasonal produce. As the menu changes based on the freshest ingredients available each season, guests can expect to taste a varied range of authentic Japanese flavours every time they visit.

Dishes are served kappo-style, a type of service that emphasises proximity between chef and diner. You might recognise this from other atas omakase or fine dining restaurants: diners are seated at a counter opposite an open kitchen, where the chef prepares each dish right in front of them.

This intimate setting allows chefs to interact with diners more closely and better attend to their needs. Coupled with the open kitchen where guests can observe the meticulous preparation of their meals, the dining experience at Takayama is representative of the spirit of omotenashi, a Japanese expression that translates to sincere, wholehearted hospitality and mindfulness.

Enjoy the Chef’s artful creations as part of a multi-course meal, priced from $130 per person for lunch and $280 for dinner. 

One of his specialties is donabe rice, where the ingredients are slow-cooked in a Japanese claypot to enhance their flavour and aroma.

For winter, the Chef is serving Tottori Salmon Donabe Rice, a variation of his signature dish that features fresh salmon imported from Tottori prefecture, pan-seared and served alongside delicate ikura.

Another one of the Chef’s specialties is the Miyazaki Wagyu. Regarded as the best beef in all of Japan, Miyazaki beef is known for its superior flavour and tenderness. Here, you can have this top-quality beef thinly sliced and carefully cooked in a white miso broth shabu-shabu style.

Finally, end your meal off on a sweet note with Hojicha and Matcha Financiers. A reinterpretation of the classic French teacake, these financiers are lightly crispy on the outside and fluffy and moist within, with Japanese hojicha and matcha flavours taking the place of traditional almond and vanilla.
