Shanghai’s Popular HK-Style Noodle Chain To Open At VivoCity—Here’s A First Look

You’re hearing it here first: Fei Zap Mai Laan (肥汁米蘭), a Shanghai-born brand known for its Hong Kong-style rice noodles, is set to open its first overseas outlet at VivoCity mall on 19 December 2025.

The popular chain, which debuted in 2017, has expanded rapidly and now operates over 60 stores across China. Much of its appeal comes from its focus on heritage recipes, some of which are over 60 years old.

Fei Zap Mai Laan traces its origins to the 1960s, when Mr Ye, who had moved from Yunnan to Hong Kong, developed its predecessor recipe by blending Yunnan rice noodle traditions with Cantonese techniques. The hybrid style was later brought to Shanghai by Mr Guan, the founder of the chain, who trained under Mr Ye after multiple trips to Hong Kong to study the recipe.

The brand is known for its Signature Zhajiang Broth, a spicy and tangy soup that combines a bold, stir-fried zhajiang of minced meat, pickled mustard greens and chilli with a collagen-rich Cantonese bone broth. It is best experienced in the Mighty Four Bowl ($13.90+), which is loaded with fish roe balls, ham, wuxiang, and char siew. While these toppings were solid, especially the sweet char siew, it was the creamy and rich soup that really impressed us.

If you’d like to go even spicier, opt for the Pickled Punch Beef Bowl ($15.90+), comprising a suan cai-based soup topped with tender sliced beef, beef tendon balls, tau pok, black fungus, bean sprouts, and coriander. This is the kind of sour-spicy broth that will numb your mouth, but that makes it all the more appetising.

The Tomato Chop Bowl ($16.90+) features a giant Hong Kong-style fried pork chop that was so large, we couldn’t even see the macaroni beneath it. While the meat component was certaintly impressive, we found the tomato broth a little watered down—neither sweet nor tangy enough for us.

The Supreme Twin Fish Bowl ($16.90+) had similar issues, as we found the broth lacklustre, though that could be because the aforementioned broths were so much more flavourful. Still, those who prefer comforting soup bases and fish—both fried and sliced fish to be exact—can consider ordering this dish.

Do note that noodles here are highly customisable: you can choose between Rice Noodles, Kway Teow, Udon, and Macaroni for your carbs, and also add toppings such as Braised Pork Intestines ($2.99+) and Beef Shank ($2.99+).

Pair your meal with refreshing drinks such as Salty Lemon 7-Up ($4.90+) or Milk Tea ($2.90+)—both commonly ordered at cha chaan teng eateries. Also consider desserts such as Mango Pomelo Sago ($5.90+)Red Bean Double-Skin Milk Pudding ($4.30+) and more!
