Osteria Mozza Has New Pasta Tasting Menu By Award-Winning Chef Nancy Silverton

Osteria Mozza has new handmade pasta menu

The name is Nancy Silverton, a renowned chef and the brainchild of the Michelin-approved Osteria Mozza in Los Angeles. ICYMI, the Singapore outpost opened in 2022 at Hilton Singapore Orchard, captivating the attention of bona fide pizza and pasta fans. Recently, the Italian restaurant rolled out a new five-course handmade pasta tasting menu, available from 15 September 2025.

Here are some key points to note before we begin: the five-course menu is priced at $88++ per person, which includes four pasta dishes and a dessert. Each pasta item is in a half-sized portion, so you’re getting two whole portions in total.

We started on a high with Maltagliati, dubbed the “badly shaped pasta” by Chef Nancy Silverton. The triangular-shaped pasta pieces were served in a ragu that was interestingly neither sweet nor tangy—a departure from the flavours we usually expect in a tomato-based pasta.

It was a smart move to start with this dish, as it was relatively light on the palate with a pleasant aftertaste and without any lingering sharpness. The pasta itself was thin yet snappy—not exactly something we’d describe as chewy—and each piece paired well with the tender duck meat.

Next, we had the bold Mafaldine all’Amatriciana, made with eggless pasta that struck a good balance between chew and bounce. The tomato-based sauce carried a creamy touch almost reminiscent of carbonara, which we found interesting.

We liked how the black pepper bits were prominent, as the mild heat helped to quell the richness of the pork jowl. Though a little tough at first bite, the pork jowl bits were savoury and flavourful, adding depth and elevating the dish overall.

The third dish, Cavatelli, featured eggless short noodles finished with toasted breadcrumbs. The pasta was chewier than the earlier dishes, while the flavours were bolder, layered with a slightly sweet undertone.

Finally, we had the Fonduta Ravioli, starring a house-made butter sauce, finished with 25-year-aged balsamic vinegar.

Each plate comes with five pieces of egg-based pasta packed with three kinds of cheese: Fontina, Parmigiano Reggiano, and Pecorino Romano. We really enjoyed the sauce; the tart, piquant kick from the balsamic vinegar helped to cut through the cheesiness.

After finishing the pasta dishes, we rounded off our fancy experience with the sweet-tangy Meyer Lemon Posset

This traditional dessert is typified by its velvety smooth, custard-like texture. While it’s creamy, it’s equally refreshing thanks to the addition of lemon juice and strawberry slices.

Osteria Mozza’s new pasta tasting menu will be available till the end of the year, at least for now. We recommend this experience to pasta lovers who appreciate variety.

The dining experience takes place at the Mozzarella Bar, which houses a maximum of 12 diners at once. Though the space is limited, the counter seats allow you to see the chefs in action.

The restaurant is located on the fifth floor of Hilton Singapore Orchard, a quick three-minute walk from Somerset MRT Station.
