Le Matin has new croissant amazake soft serve desserts

For fans of Le Matin Patisserie who mourned the closure of their Robinson Road outlet, the opening of their space at ION Orchard brought great relief. Now, other than it being in the heart of town, there’s even more reason to visit—his Croissant Amazake Soft Serve.

Headed by Chef Al-Matin, who’s an alumnus of the world’s biggest dining spots including Noma, Restaurant Andre, Adriano Zumbo Patisserie, Black Star Pastry and more, Le Matin is well known for their innovative French-inspired pastries. When he launched his bake boxes during COVID-19 lockdowns, they would see virtual waiting queues stretching into the 1,000s.
You may have encountered Chef Al-Matin’s Croissant Amazake Soft Serve previously at his other outlets, but this time, they’re relaunching it in conjunction with Earth Day 2023—a fitting occasion since this soft serve is made with leftover croissants and pastry trimmings. These are fermented with koji fermentation culture using a method similar to that of amazake, a rice-based Japanese drink.
The soft serve and its croissant cone may not be new, but there are other ways you might now enjoy it, including the most basic In a Takeaway Cup ($7+).
Then of course you have your With a Croissant Cone ($12++) edition, which is essentially Le Matin’s famous croissant in four variations: in its original form, koji-fermented as a soft serve, crumbled into flakes to top the soft serve, and finally as a thinly sliced, biscotti-like chip that jauntily sticks out of the soft serve.

The As an Affogato ($11++) option is one for caffeine fiends, where the unique flavours of the creamy soft serve meet the robust bitterness of espresso.
It’s clear that the consumer experience has been considered: you’re served the espresso shot in a beaker complete with spout and handle, so you are less likely to make a mess when you pour it over the soft serve.
Saving the best for last, we finally come to With Brown Butter Waffles ($20++), where the same soft serve is paired with four brown butter waffles that are sinfully decadent and best enjoyed hot. Don’t bother being civilised with a fork and knife—just go in with your hands and a spoon for the soft serve.
While you’re at ION Orchard, head up to the fifth floor carpark to check out the newest Surrey Hills Grocer for brunch, or trot down to the basement to get a coffee from Puzzle Coffee, a Melbourne-famous roaster!
