Kantin has an edible dirty sponge cake at Jewel Changi Airport
“Is that an actual dish?” I thought when I saw this new dessert made by Kantin, a Bornean restaurant at Jewel Changi Aiport. It bears an uncanny resemblance to a dirty dish sponge, but fret not—it is entirely edible.
Priced at $18++, this ‘dirty dishwashing sponge’ dessert is a lemon butter cake with English orange marmalade. Pandan lime syrup is drizzled over the cake to mimic a green dishwashing liquid, while lemon-infused foam is added for its soap-like appearance. The plate is also made ‘dirty’ intentionally to resemble how unwashed dishes would look.
For a more immersive experience, the staff also gave us yellow rubber gloves to put on while trying this dessert. In case you’re wondering, they also assured us that these gloves are 100% clean.
One thing’s for sure: this dessert tastes better than it looks. The tangy flavour of the cake was quite pronounced, and I appreciated that it wasn’t overly sweet. The cake also absorbed the pandan lime syrup, which gave it an extra zesty kick. My favourite part was the foam, which intensified the lemony flavour of an already lemon-centric dessert.
