We Revisited Mr Baguette After 10 Years For Their Viral Lava “Baguettes”

Hawker bakeries are fast becoming the latest trend as they continue to sprout up across the island. What I really appreciate about them is how you can often find unique bakes or value-for-money offerings in these humble spots, making for the perfect sweet treat after a hearty hawker centre meal. While most of these stores typically sell breads, cakes, and muffins, there is one bakery that stands out from the rest—Mr Baguette at Golden Mile Food Centre

The first thing that might come to mind is the classic long, thin French bread with a crisp crust, typically stuffed with savoury fillings. However, Mr Baguette puts a completely different twist on it. Here, you will find miniature, crunchy bowl-shaped baguettes packed with an assortment of sweet fillings instead. It was a spin-off unlike anything we had come across before, and is said to be the first and only concept of its kind in Singapore. 

Food at Mr Baguette

Having set up shop at the food centre close to two decades ago, stall owner Kent Wee eventually found his own niche after several earlier ventures failed, and it is clear that he has successfully carved out a place for himself in Singapore’s highly competitive pastry scene. 

With 10 flavours ranging from Red Velvet Lava and Tiramisu Lava to even Adzuki Lava, each baguette starts from $2.80, while sets of two go for $5.20 and four for $10. Extra emphasis is placed on heating them before consumption, as every baguette is packed with molten filling that oozes out messily with each bite. 

We started with Hazelnut Lava, one of their most popular flavours. The baguettes arrived piping hot, with a satisfying crispy exterior that gave way to an airy interior. True enough, the molten filling came spilling out with every bite, creating a deliciously messy overflow. We highly recommend that you come prepared with plenty of tissues—you’ll need them. 

As for the hazelnut filling, we felt that while it made for an enjoyable combination—almost like a creamier version of Nutella spread over crispy toast—the hazelnut flavour could have been more pronounced. The lava itself leaned rather sweet, but the light and not overly sugary baguette helped to balance things out nicely.

Moving on to the Cookies and Cream Lava, this flavour came filled with white chocolate lava and chunky black biscuit bits reminiscent of Oreo cookies. The crushed cookie pieces provided a pleasant textural contrast with their crunch, while the filling itself was rich with some subtle hints of vanilla. 

One of our favourites was the Apple Lava, which featured thick cinnamon apple custard generously packed with crunchy cooked apple pieces. We especially enjoyed the slight tanginess it brought, which contrasted nicely against the sweetness. The sauce itself was viscous and gooey, yet somehow did not feel as heavy as some of the other flavours. 

An underrated highlight of Mr Baguette has to be their egg tarts, which are priced the same as their lava baguettes. You can even mix and match your purchases for the best of both worlds, though these egg tarts are best enjoyed chilled.

We quickly understood why they stood out. Unlike traditional egg tarts with their flaky exterior, this version uses a soft, biscuit-like crust that is delicate yet still holds together well without crumbling apart immediately. Served cold, it offers a custardy filling that is creamy yet slightly fluid.

The Cheese Tart was rich and savoury, with a cream cheese-like filling that carried a gentle sweetness. It had an almost mousse-like texture, with how velvety it was, while the crust provided a subtle buttery base that tied everything well. 

We also tried the Chocolate Banana Tart, featuring a rich, silky chocolate ganache paired with generous chunks of fresh banana at the centre, giving it a pleasant, natural sweetness. It tasted premium and could easily rival chocolate tarts from more established dessert spots.

Their Mini Banana Pudding ($3.30) was a slight miss in comparison. While it had a pleasantly soft, creamy texture, it leaned overly sweet, and the wafer crumbs did little as they lacked any real crunch.

Ambience at Mr Baguette

Located at the basement of the ever-popular Golden Mile Food Centre, it can get quite stuffy and crowded, especially during peak hours, so you may want to consider taking them away if you are just here for their treats. Once again, a gentle reminder that the lava baguettes can get quite messy, so do handle them with care when eating on the go.

Mr Baguette – Eatbook review

If you are looking for an alternative to your mainstream muffins and cakes, Mr Baguette is well worth the visit. Their baguettes are packed with lava-filled goodness, and it’s worth exploring the range of flavours beyond the usual picks. Be sure to try their egg tarts while you’re at it as well. Overall, the stall doesn’t feel niche for the sake of being different, but instead offers genuine quality across its offerings.
