The beachfront event is split into different areas: International Grills, Local Grills, which spotlights 18 local brands, and Beachside Grills, where all the open-flame cooking action is set against the Siloso Beach backdrop.

New to GrillFest this year is CHARROU, an online family business specialising in siu yok and char siew. The Charrou Trio Buns ($19) is worth ordering if you enjoy variety, as you get three different buns: Honey Crystal Char Siew, Crispy Roasted Pork, and Duck It & Wrap It.

All three buns were delicious in their own right, each big enough to share with a friend. Our unanimous favourite, however, was the char siew. The sweet BBQ pork was uber tender with just the right amount of fat; our only gripe was that the fried mantou was a tad too greasy.

If you’re here with a group, you won’t go wrong with Jett Barbecue‘s Everything Platter ($149) for sharing. While it’s on the pricey end, this showstopping feast gets you a lot of food: one full Smoked Texas Style Dino Ribs (U.P. $99), two Smoked Beef Cheek Burgers (U.P $25), one Smoked Beef Loaded Tater Tots (U.P. $17), and a side of Signature Mash Potatoes (U.P. $8). When you do the math, you’re getting much more than what you’re paying.

My colleague fell in love with the meltingly tender ribs, paired excellently with the house-made BBQ sauce.

On the other hand, I couldn’t stop munching on the burger, which came stacked with a thick mountain of smoky beef cheek slices.

Those in the mood for seafood are not left out at Savour & Serve, as this stall offers a plethora of grilled-to-order seafood items.

You have to get their Signature XL Salmon Skewers, priced at $10 each. These giant skewers come with your sauce of choice; we went with the classic Mentaiko Mayo as it was a failsafe option. We were impressed by how fresh and succulent the fish was: perfectly flaky with a kiss of smoke, while remaining juicy and pink in the middle.

The XL Scallops with Secret Sauce ($15 for three) paled in comparison. While the scallops were fresh and sweet, I felt the price was too steep for their size—they looked more like regular-sized scallops instead.

Those who love DIY experience can check out GrillHouse, a new concept where diners use a Ninja Foodi Smart XL Grill to cook seafood and meat however they like.

Choose from three curated platters, all featuring fresh catch sourced from local supplier LYHseafood. The most affordable of these is Set A ($38), which gets you tiger prawns, seabass fillet, half shell scallop, pork belly, and Angus chuck roll. Set C ($98), meanwhile, gets you a full Boston lobster, king crab, Wagyu karubi and other premium ingredients.

Alternatively, leave it to the pros and have their chefs do the grilling. Highlights include the Aburi Torched Salmon ($14), Burnt Sambal Stingray ($12), and Burnt Sambal Lala ($8.50).

While GrillHouse is the headliner, be sure to check out the offerings of local brands such as BLUE SMOKE, Slurp Your Oyster, and Fatty Patty Burger and Grill.

Don’t forget to hydrate in between rounds of feasting. Getsome offers a delicious range of craft beers, both by the bottle and on tap, for you to choose from. Prices vary depending on the flavour, so swing by their stall for a recommendation.

Then, end your visit on a sweet note at SOHTT, a returning GrillFest favourite. Their Grill-Out Dessert ($15) gets you two mochi croffles topped with your grilled fruit of choice—we went with caramelised apple crumble—and a scoop of vanilla ice cream.

While not exactly wallet-friendly, it hits all the right spots with its hot-cold pairing of fresh croffles and bruleed apple slices alongside cool ice cream.

FYI, the dates of the festival are 17 to 20 July, 25 to 27 July, 1 to 3 August, and 8 to 10 August. The festival will run from 4pm to 10:30pm on each day.
