With the opening of the omakase restaurant Sushidan last year, Raffles City diners were treated to great Japanese cuisine at affordable prices. Now, the mall is set to welcome another Japan-linked concept—this time with an Italian twist. Enter sio pasta, a pasta bar by renowned Japanese chef Shusaku Toba, best known for his work at the Michelin-approved Italian restaurant sio Aoyama in Tokyo.
Sio pasta officially opens on 26 March 2026, and will serve fresh, handmade pasta at affordable prices—which is a pleasant surprise, considering the pedigree of its chef-owner. The menu will feature over 10 pasta dishes, with most items showcasing Chef Toba’s Japanese influences.
As far as we can tell, the most affordable item on the menu is the Japanese Garlic Carbonara and Fried Egg, Cheese, Salted Kelp Pasta ($13.80). That combination of ingredients alone breaks many of the conventions of classic carbonara, but for those who enjoy their fusion dishes, this dish has plenty of potential.
Other dishes to look forward to include the Pasta with Scallop and Corn in White Miso Butter ($16.80), Mentaiko Pasta ($16.90), and Mentaiko Cream Carbonara ($16.80). The first of these looks and sounds amazing—the combination of sweet corn, umami white miso butter, and tasty scallops.
