From traditional takes with abalone and salmon to modern twists featuring truffle chicken and taro strips, these options make celebrating easy and still full of huat.

Your average yusheng gets a luxurious upgrade thanks to Carlton Hotel Singapore’s Wah Lok Cantonese Restaurant. Come Chinese New Year 2026, kickstart the festivities by lo hei-ing with a selection of elevated yusheng made with premium greens and seafood.

The new Sea Cucumber White Bait Lo Hei (from $108+) is a standout—a textural medley of collagen-rich braised sea cucumber, crunchy greens, and crispy white bait. Alternatively, order the showstopping Alaskan Crab Lo Hei (from $248+), with sweet, succulent crab meat complemented by crisp vegetables, condiments such as peanuts and crackers, all tossed in Wah Lok’s signature dressing. While these two platters are available for both dine-in and takeaway, diners planning to have their reunion dinner at the restaurant can consider ordering the Hamachi Soon De Lo Hei (from $128++), a dine-in exclusive featuring finely shredded fresh vegetables and herbs crowned with thick slices of sashimi-grade hamachi.

Those looking to complete their reunion spread can add the Fortune Roast Duck ($138), paired with “chicken rice” couscous and house-made sambal ijo, or the Lotus Treasure Rice ($88), fragrant with Chinese sausage, shrimp, and chestnuts. If you’re after something different this year, check out Ban Lan’s Fujian-style Prosperity Yu Sheng (from $66), available for takeaway this CNY. The Michelin Selected Suzhou restaurant, which just opened in Singapore, brings its heritage flavours to the festive table—and it starts with their signature lo hei.

The yusheng stands out with hand-shredded taro, prized in Fujian culture for symbolising jade and abundance. It’s also tossed with purple cabbage, golden fried sweet potato, carrot, green radish, and an ultra-premium addition: first-harvest seaweed from Fujian, only available 15 days a year. You’ll also find slivers of dried persimmon, a staple in Fujian households, adding a natural sweetness and glossy amber touch.

The dressing is house-made, more mellow than the usual citrus-heavy versions, with a blend of red oil, white sesame, and other umami-packed ingredients. The Prosperity Yu Sheng is available in two sizes: small ($66) and large ($96), for dine-in or takeaway.
