Shu Heng Bi Tai Mak opens in Hong Lim Food Centre

Shu Heng Bi Tai Mak, a popular stall in Ang Mo Kio, made a name for itself selling Johor-style mee tai mak, AKA 老鼠粉 (láo shŭ fĕn) or mouse noodles. Recently, they’ve opened their second-ever outlet, this time in Chinatown’s Hong Lim Food Centre.

Located on level one of the famed hawker centre, Shu Heng offers a few other noodle dishes beyond just their classic mee tai mak.

If it’s your first time trying Shu Heng’s fare, make the Johor Bi Tai Mak (from $4) your priority. Featuring thick, silky strands of rice noodles bathed in a gravy-like broth, along with minced pork, mushrooms, fried shallots and more, this flavourful yet comforting dish is likely to impress.

Fans of abalone can consider getting the Shu Heng Abalone Bi Tai Mak ($6.80). This version pairs the stall’s famous mee tai mak dish with fresh, chunky pieces of abalone.

Those who prefer their noodles dry can get the Mushroom Pork Minced Fish Ball Noodles (from $4). This dish comes with ingredients one would expect from bak chor mee, such as fishballs, fishcake, minced pork, and braised mushrooms, except that you can have them with chewy mee tai mak.

There’s also the Pork Leg Noodle ($5.80), which pairs bone-in pork leg and braised mushrooms with mee tai mak. Those who enjoy gelatinous pork skin and tender, succulent meat will find much to like here.
