1. Peanut Butter And Kaya Crumble Toast

This Peanut Butter And Kaya Crumble Toast boasts coconutty notes, which work just as well, if not even better, than the iconic PB&J combination. Upgrade this toast with a kaya crumble that can easily be done in under 10 minutes, for added texture and extra flavour!ย 

Yield: 4 slices
Cooking time: 20 minutes

Ingredients:

75g unsalted butter, softened
10g + 4 tbsp kaya
Green food colouring or pandan extract (optional)
113g all-purpose flour
50g white sugarย 
50g brown sugarย 
Pinch of saltย 
4 tbsp peanut butterย 
25g desiccated coconut
4 slices of sandwich breadย 

Directions:ย 

  1. Preheat the oven to 190ยฐC, and line a baking tray with parchment.
  2. Beat the softened butter in a mixer till pale and creamy, then mix in the kaya and food colouring or pandan extract, if using, until well combined.
  3. In a separate bowl, combine the flour, salt, and both sugars.ย 
  4. Combine the wet and dry mixtures to form a wet, sticky dough.
  5. Crumble the dough with your fingers on the baking tray, and bake for 5 minutes.
  6. Spread peanut butter and kaya over a slice of semi-toasted bread.
  7. Top the bread with some crumble, and return it to the oven. Bake until golden brown.
  8. Sprinkle with desiccated coconut to serve.

2. Avocado And Bak Kwa Jam Toast

If you are looking for something sweet, savoury, and spicy, all in one bite, try this Avocado And Bak Kwa Jam Toast. The creaminess from the avocado, umami notes from the bak kwa jam, and a touch of spiciness from the Sriracha complement each other to produce this flavourful toast.ย 

Yield: 1 slice
Cooking time: 30 minutes

Ingredients:

ยฝ avocadoย 
Black pepperย 
1 slice of sandwich bread

Bak Kwa Jam:
3 strips of bacon, sliced into ยฝ-inch pieces
115g bak kwa, dicedย ย 
ยผ onion, dicedย 
3 cloves of garlic
4 shallotsย 
1 tbsp balsamic vinegarย 
1 tbsp apple cider vinegar
โ…“ cup black coffeeย 
ยผ cup of waterย 
1 tbsp honey

Chilli Mayo:ย 
ยฝ tbsp srirachaย 
3 tbsp mayonnaiseย 

Directions:

  1. Fry bacon in a pan on medium-high heat till slightly brown, and fat has rendered.ย 
  2. Add onions, shallots, and garlic to the pan and fry with the bacon fat till caramelised.
  3. Add bacon, bak kwa, coffee, water, and both vinegars to the pan.ย 
  4. Simmer on low heat for 10 minutes, or until most of the liquid has evaporated.
  5. Transfer the mixture into a blender, and pulse till it reaches your desired texture. Set aside to cool.
  6. In a small bowl, mix sriracha and mayonnaise together.ย 
  7. Toast the bread, and spread with chilli mayo.ย 
  8. Top with sliced avocado, then dollop with bak kwa jam to serve.ย

3. Ah Long Toast

Save your travel time and try out this Ah Long Toast, inspired by local min jiang kueh stall Ah Long Pancake. This creamy and savoury toast is packed with sweet corn, cream cheese, a runny egg, and stringy mozzarella cheese. A sinful but moreish dish.ย ย ย 

Yield: 2 slices
Cooking time: 30 minutes

Ingredients:

ยฝ can of corn, drainedย 
1ยฝ tbsp cream cheeseย 
ยฝย  tsp onion powderย 
ยฝย  tsp garlic powderย 
2 tsp paprikaย 
Pinch of pepper and saltย 
2 eggs
100g mozzarella cheese
2 slices of sandwich breadย 

Directions:

  1. Preheat the oven to 200ยฐC.
  2. In a small bowl, mix the corn, cream cheese, garlic and onion powders, paprika, salt, and pepper together.ย 
  3. Layer the corn mixture thickly on the bread, and create a well in the middle.ย 
  4. Crack an egg into the well, season with salt and pepper, and top generously with mozzarella.ย 
  5. Bake for 5 to 8 minutes, or until the cheese has melted and the egg has reached the desired doneness.

4. Egg In Hell

Egg In Hell, AKA shakshuka, is a Middle Eastern dish that is mainly composed of a spiced tomato base, topped with poached eggs, and served with carbs of your choice. To make this a convenient and fuss-free experience, we have adapted it into an all-in-one toast, where you can enjoy the robust flavours plated on a slice of bread.

Yield: 4 slices
Cooking time: 30 minutes

Ingredients:

2 tbsp oil
ยฝ onion, dicedย 
2 cloves of garlic, mincedย 
ยฝ red bell pepper, dicedย 
ยฝ tbsp paprikaย 
170g tomato passataย 
Pinch of pepper and salt
4 eggs
200g mozzarella cheese
4 slices of sandwich bread
Chilli flakes (optional)
1 tsp Italian herbs (optional)

Directions:

  1. Preheat the oven to 200ยฐC. Line a baking tray with parchment.
  2. Saute onions, garlic, and bell peppers in oil on medium heat till softened, approximately 5 minutes.
  3. Add paprika and chilli flakes, and fry for another minute.ย 
  4. Pour tomato passata in, and simmer over low heat for 10 minutes, or till thickened, stirring occasionally. Season to taste.
  5. Using a cookie cutter, or knife, cut a hole in the centre of the bread.
  6. Lay the bread on the prepared tray, and top with tomato mix, avoiding the cut-out hole.
  7. Crack an egg into the cut-out hole, sprinkle generously with cheese, and bake for 5 to 8 minutes, or till cheese has melted and the egg has reached the desired doneness.
  8. Dust with black pepper and salt to serve.

5. Honey Ricotta With Berries And Mint Toast

For a light and quick meal, try this Honey Ricotta With Berries And Mint Toast. Weโ€™ve gone with berries and sandwich bread, but adapt it with any fruit and bread of your choice!ย 

Yield: 4 slices
Cooking time: 5 minutes

Ingredients:

2ยฝ cups of assorted berries, slicedย 
2 cups of ricottaย 
1 tbsp sugarย 
ยฝ tsp vanilla extract
1 tsp lemon zestย 
4g mint leaves, thinly sliced
2 tbsp honey
Pinch of salt
4 slices of sandwich bread
20g almond flakes (optional)

Directions:

  1. Combine ricotta, vanilla extract, sugar and lemon zest in a medium bowl.ย 
  2. Toast the bread, and spread with cheese mixture.ย 
  3. Top with fruits, mint leaves, and almond flakes. Drizzle with honey to serve.

6. Upside-Down Almond French Toast

This recipe has adapted the upside-down cake for this Upside-Down French Toast, allowing the caramelised nuts to bake into one side of the bread.ย 

You’ll get multiple servings of French toast at once, without having to labour over the stoveโ”perfect for when you host a brunch party. Switch up the nuts, and use a mix of sliced, crushed, and whole nuts for some fun!ย 

Yield: 4 servings
Cooking time: 30 minutes

Cooking time hacks: Soak the slices of baguette in the milk mixture overnight.

Ingredients:

ยพ cup of full cream milkย 
ยพ cup of heavy creamย 
6 large eggs plus 3 egg yolks
2 tbsp vanilla extract
1/2 cup of light brown sugar
3 tbsp unsalted butter, melted
30g of maple syrupย 
1 cup of almonds, sliced
1 loaf baguette, sliced into 1-inch piecesย 

Directions:

  1. In a bowl, whisk milk, heavy cream, eggs, and vanilla extract together.ย 
  2. Arrange the bread in a wide shallow pan, and pour the milk mixture over. Wrap the dish with cling wrap and refrigerate till bread is thoroughly soaked.
  3. Stir sugar, both syrups and almonds into melted butter until well combined.ย 
  4. Spread the sugared almonds in a casserole dish, and cover completely with the soaked bread.
  5. Bake for 35 minutes in a preheated oven at 175ยฐC.ย 
  6. Overturn the casserole on a plate to unmould the bread. Cool before serving.

7. Mala Pizza Toast

Zhng-up a basic pizza toast with this fiery Mala Pizza Toast recipe. As the name suggests, this toast packs a punch, with an underlying sweetness of tomato paste and mozzarella cheese to cut through the spice for an addictive bite.ย ย 

Yield: 2 slices
Cooking time: 35 minutes

Ingredients:

2 slices of baguetteย 

Mala Chicken:
2 boneless chicken legs
1 packet pre-made mala paste
2 tsp hua tiao wine
1 tsp ginger, minced
2 tsp garlic, minced
2 tsp sesame oil
2 tsp cornflour
1 tbsp sesame seeds (optional)

Pizza Sauce:
40g tomato paste
1 tsp mala paste
100g mozzarella cheese
ยฝ cup of cherry tomatoes, halved
2g coriander, finely chopped (optional)

Directions:

  1. Preheat the oven at 200ยฐC.
  2. Mix hua tiao wine, minced garlic and ginger, cornflour, mala paste, and sesame oil together in a large bowl. Coat chicken in this marinade, then lay on a baking tray and bake for 20 to 25 minutes.
  3. Slice chicken, then toss with sesame seeds if using.
  4. Mix tomato paste and mala paste together. Spread on toasted bread.
  5. Top with slices of tomato, chicken, and cheese. Return to the oven for 5 minutes, or until the cheese has melted.ย 
  6. Finish with coriander, if using.

8. Curry Chicken Toast

For a true local flavour, with no surprising twist, opt for this hearty Curry Chicken Toast that is guaranteed to bring warmth to your tummy. Instead of dipping bread into a bowl of curry, this recipe fits everything snugly on a slice of toast, for a compact and easy meal.ย 

Yield: 4 servingsย 
Cooking time: 40 minutes

Ingredients:

2 large waxy potatoes, diced
1 tbsp oil
2 boneless chicken legs, cubed
1 packet of pre-made curry paste
60ml coconut cream
4 slices of processed cheddar, or 200g mozzarella
4 slices of sandwich bread

Directions:

  1. Put the diced potatoes in a pot. Fill with tap water till just covered. Boil for 12 to 15 minutes, or a fork pierces the potatoes easily, then strain and set aside.
  2. Coat chicken pieces in curry paste and let stand for at least 10 minutes.
  3. Heat oil in a shallow pan on medium heat, and fry chicken until fragrant.
  4. Add strained potatoes, and stir fry to combine.
  5. Turn the heat down and stir coconut cream in.
  6. Preheat the oven to 200ยฐC. Top slices of lightly toasted bread with chicken curry, and finish with your choice of cheese. Pop in the oven till cheese has melted.
