At the helm is Italian Chef Antonio Brancato, an award-winning pizzaiolo, AKA pizza master, with over 16 years of experience. As part of the revamp, expect a range of new flavours, all inspired by his life journey, from his roots in Southern Italy to his newly adopted home in Singapore.
Food at Anto Pizza e Apertivi

Like every good pizzeria, all the pizza here is prepared with hand-kneaded dough and fresh ingredients, before being baked in a wood-fired oven for that perfect crust.

With the tantalising scent of freshly-baked pizza quickly filling the room, we went straight for the pies and started with the Bottarga Alla Scapece ($38++). The pizza was topped with a load of tuna bottarga, AKA dried tuna roe, toasted almond slices, mint, fried zucchini, zucchini cream, fior di latte cheese, and a drizzle of extra-virgin olive oil for added fragrance.

Visually, the pizza looked stunning, thanks to the vibrant green of the zucchini. But sadly, its flavours didn’t quite live up to expectations. The pizza tasted quite salty for us and quickly became cloying after just a few bites, likely due to the generous serving of tuna bottarga. This was a shame, as the pizza would have otherwise tasted great with the refreshing combination of mint and zucchini cream, zhnged up by the crunch from the toasted almonds and fried zucchini slices.
On the upside, we have to give props to the crust. It was the textbook definition of a great Neapolitan-style pizza, baked to perfection with a delicious smoky char and a fluffy, airy, and slightly chewy texture.

Up next was the Lucana Ritrovata ($38++), featuring a blended fava bean base, topped with roasted artichokes, fresh endives, smoked bacon, onion cream, fior di latte cheese, chilli flakes, and olive oil on the same delicious Neapolitan-style crust.

Of all the pizzas we tried, this one was our favourite. It had a lovely earthiness from the chunks of artichoke and fava bean paste, which paired beautifully with the rich, juicy slices of thick-cut bacon. The fava beans, combined with the oozy cheese and onion cream, also lent a nice, creamy mouthfeel that was reminiscent of a thick, nutty hummus. The chilli flakes were a great touch too, adding a mild kick to round off the dish.

Lastly, we had the Anatra Quasi All’Arancia ($30++). Inspired by Chef Brancato’s favourite Singaporean dish, duck rice, this pie is topped with slices of smoked duck breast, fresh orange zest, fennel, buffalo toma cheese, and a Macino Vermouth Chinato wine reduction.
Unlike the other two pizzas, this one is baked in an oiled-up pan. According to Chef Brancato, this is done to achieve a crispy, golden crust, offering something different to their usual chewy Neapolitan-style pizzas.

We loved the crust on this pizza. It was crunchy on the outside, yet soft and puffy on the inside. And despite being baked in an oiled-up pan, it wasn’t the least bit greasy or soggy, even when left out for a while.
In terms of its toppings, the duck was the star of the show. Each slice was succulent and tender, with just the right balance of silky fat and lean meat. We also enjoyed the light, tangy-sweetness of the freshly grated orange zest and wine reduction. That said, most of the flavours came from the duck, and while the meat didn’t overwhelm, we would’ve liked the other elements to shine through more.

With the pizzas out of the way, it was time for dessert: the Sgroppino ($18++). For the uninitiated, Sgroppino is a traditional Venetian dessert which blends lemon sorbet with prosecco and vodka. In Chef Brancato’s rendition, he switches things up by adding a scoop of fior di latte cheese sorbet to the mix.

Pro tip: get your cameras ready, as the dessert is freshly whisked by the staff right by your table till it reaches a smooth, stretchy texture.

If the sound of cheese-flavoured ice cream has you put off, we’d tell you to try it before you knock it. While cheese can normally add a strong, pungent flavour to dishes, the cheese sorbet did anything but. It had a subtle aged richness that worked in perfect harmony with the zesty-sweet lemon sorbet. Our only gripe was that there were bits of crunchy ice shards hidden within the dessert.

Decor-wise, the space sports a modern yet traditional look, featuring heritage shophouse elements for that rustic charm.

Anto Pizza e Apertivi – Eatbook review
Knowing that Anto Pizza e Apertivi is the top-rated pizzeria in Singapore, we were slightly disappointed with their new pizza offerings. While the crust was consistently great, not all the pizzas hit the mark in terms of flavour, especially given the premium prices. That said, it wasn’t a complete miss, and we’d still be open to giving them another shot down the line to try some of their other flavours.
