Ring in the Year of the Rabbit with the CNY offerings from umisushi! If you’re celebrating at home, lo hei with the uber-cute umi Huat Huat Yu Sheng ($128.88), beautifully arranged in the shape of a dragon. Alternatively, get the umi Da Ji Yu Sheng ($108.88), arranged to look like the Chinese word 吉 (ji), signifying good luck and fortune. Both yusheng servings come with 18 pieces of fresh Norwegian salmon slices. For smaller parties of six to eight, order the medium-sized umi Prosperity Yu Sheng ($55.88). If you’re hosting up to 12 people, get the large version ($65.88) instead. All yusheng feature the full works: freshly shredded veggies, fresh Norwegian salmon slices, a refreshing plum dressing, as well as pok chui AKA crispy crackers.

Carlton Hotel Singapore’s award-winning Wah Lok Cantonese Restaurant delivers a refreshing change from the usual smoked salmon-topped yusheng with their signature Soon Tak Yu Sheng (from $108). Available for dine-in only, this yusheng departs from the usual sweet-sour plum sauce flavour of the classic CNY salad. Instead, the medley of julienned vegetables, from thinly sliced cucumber to spring onion and other fresh herbs, is topped with a mound of sliced hamachi sashimi and finished with a savoury dressing that’s prepared with light soya sauce and sesame oil. Fresh, light, and delicious, this yusheng is a great start to a reunion dinner.

The Prosperity Salmon & Coral Seaweed Yu Sheng at Red House Seafood comes in two sizes: $74.10+, and $128.60+, which are good to serve four to six, and eight to 10 persons respectively. There’s also an abalone version priced from $106.80+. Get them for takeaway from now till 5 February 2023 when you call their outlets at either The Esplanade or Grand Copthorne Waterfront.

Yuè (乐), a Chinese restaurant located in Aloft Singapore, has a festive lineup that includes their Prosperity Yusheng (from $68), which comes topped with smoked salmon, scallops, and a sweet and zingy passionfruit sauce. If you’re feeding a large group, let everyone indulge in their Abundance Yu Sheng (from $128), which feeds up to 10. One Michelin-starred Shisen Hanten has a wide variety of Chinese New Year takeaways available this year, including the Shisen Hanten Prosperity Salmon Yusheng (from $88). Each yusheng set comes with fresh julienned greens, as well as pieces of salmon, alongside a zesty dragonfruit sauce that’s themed for the Dragon New Year. Swensen’s has some of the most affordable yusheng out there—great if you’re on a budget this CNY. Their standard Prosperity Yusheng is priced from $29.80 for their regular portion, and comes with 18 different ingredients, including smoked salmon, as well as shimeji mushrooms. Those looking to splurge can try their Abalone Prosperity Yusheng ($38.80), which comes with pieces of smoked salmon and a platter of baby abalone pieces to place stop. Do note that Swensen’s only offers yusheng for self-collection at Swensen’s and Earle Swensen’s outlets islandwide.

12. Ju Xing Home

This is the first CNY season for new restaurant Ju Xing Home, and they’ve got you covered with their very own Prosperity Yu Sheng, full of the requisite crisp, julienned veggies. They’ve jazzed it up with purple sweet potato, dried orange peel, melon and more too; accompanying this yusheng is a house-made sauce of fruits and plum for a most appetising combination.
Prices start from $48++ for a portion that’s good for four to six, and from $78++ if you’d like the smoked salmon-topped version. The Smoked Salmon + Abalone Prosperity Yu Sheng is priced from $138++.
