Whiskdom Review: IG-Famous Bakery Opens At Clarke Quay With Lava Brownies And Chunky Cookies

The pandemic has disrupted many livelihoods, but for some folks, it might be just the push they needed to begin something new. Whiskdom is one of such success stories. What started out as a home-based bakery for founder Fiona, who was previously in the finance sector, soon launched officially as a fully-fledged retail space in Alexandra Central in June 2020. A year and a half later, the popular IG baker has emerged again with a second store in Havelock 2 at Clarke Quay.

The past couple of years saw the rise of IG-worthy molten-filled bakes, including those by BUNDT By The Backyard Backers, which, coincidentally, happens to be in the same building as Whiskdom.

If you’ve followed Whiskdom for a while, you’d be familiar with their signature lava-filled brownies and Levain-inspired cookies. At this new branch, the menu is straightforward but the choices are aplenty. The goodies are baked fresh daily at the Alexandra flagship, and then transported to the Havelock store, which also serves as a convenient pickup station for online orders.

Treat yourself to a box of six ($38), which lets you mix and match between the different flavours. They’re all priced the same—$6.50 each. I love that there’s a great variety to choose from, but if you’re spoilt for choice, you can always ask for recommendations.

The cookies are properly thicc and chunky, with an ooey-gooey centre that beckons you to tuck in, stat. Get your cam ready for the shot, as the filling oozes out immediately upon tearing. Made with premium Dutch-processed cocoa, the molten-centred brownies are no less decadent.

There’s much debate as to what constitutes the perfect chocolate chip cookie, but I feel it’s mainly up to personal preference. Although I’m impartial to most types, I do love a chonky cookie stuffed with ample bits of quality chocolate—just like the one at Whiskdom. Valrhona chocolate chunks are used in the Chunky Chocolate Chip Cookie for a superior taste, though overall, it was a tad sweet for my liking.

Next on our list was the Crème Brûlée Cookie, which features Whiskdom’s classic chocolate chip cookie dough wrapping a smooth and luscious pudding inspired by the famous European dessert. Speckled with Madagascar bourbon vanilla beans, the rich custard added another layer of complexity to the flavour of the cookie, making it less one-dimensional. There’s only one thing lacking—the caramelised sugar topping for crunch.

My favourite from the cookie lineup was the Matcha Lava flavour, as the intense and earthy tea notes went hand in hand with the sweet and creamy white chocolate buttons. The cookie texture was on point, especially after it was warmed up in the oven. Whiskdom is extra particular about the storage and reheating of their bakes, which only goes to show how much pride they take in their business. Soft, dense, and loaded with white chocolate, the hefty treat was surprisingly less sweet than I’d expected it to be.

You can’t leave the store without trying their IG-famous lava brownies. If you’re a brownie purist, start with their OG: Salted Dark Chocolate Brownie. Rich with dark cocoa notes, slicing through the fudgy brownie square revealed a lava centre overflowing with brownie batter and a lighter-hued chocolate filling. It’s simple and satisfying, but I found myself wishing there were more sea salt flakes to cut through all the sweetness.

As a fan of cookie butter, the Speculoos Delight Brownie was a delight to consume. The cinnamon notes from the Speculoos complemented the uber gao chocolate, and somehow made it less jelak than I’d imagined. Unsurprisingly, it’s one of their bestsellers.

I’m a sucker for any berry-chocolate combination, so I knew I had to get the Raspberry Dark Chocolate Brownie. And boy, it didn’t disappoint. The tart berry notes elevated the brownie, adding a refreshing element to the indulgent treat. It’s probably my favourite item on the menu.

On top of bakes, an interesting addition to this outlet is the coffee menu. Whiskdom is said to be Singapore’s first-ever cafe that uses ROK, a manual espresso maker from the UK. As someone with a ROK machine of my own, this was an exciting piece of news for me.

Wash everything down with an Iced Black ($5) to cut through the sugar, or get an Iced Mocha ($7.50) that features a special in-house chocolate syrup made with premium dark cocoa powder.

Whiskdom sits in a prime spot along the row of shops in Havelock 2, which is a two-minute walk from Clarke Quay MRT Station. It faces the main road, so the ongoing traffic is an added advantage to the brand’s visibility. Do note that there are only a couple of seats as this is primarily a takeaway kiosk.

Whiskdom’s lineup of brownies and cookies go beyond just the aesthetics. Yes, they’re pretty to look at, but they’re equally tasty. If you don’t have a sweet tooth, maybe the less sweet options of Raspberry Dark Chocolate Brownie or Matcha Lava Cookie will make you a convert.
